Auguste Escoffier School of Culinary Arts Baking and Pastry Programs

Auguste Escoffier School of Culinary Arts is a private culinary school with two campuses, in Boulder, Colorado, and Austin, Texas, plus a set of online programs that run through the Boulder institution. Boulder awards a 30-week Diploma in Pastry Arts and a 60-week Associate of Occupational Studies (AOS) in Baking and Pastry. Austin awards a 30-week Diploma in Pastry Arts and a 60-week Associate of Applied Science (AAS) Degree in Pastry Arts. Online students can choose a Diploma in Professional Pastry Arts or an AOS in Baking and Pastry, each 60 weeks.

The two campuses are separately accredited, publish separate catalogs, and set separate prices. Boulder and the online programs are accredited by the Accrediting Council for Continuing Education and Training (ACCET), while Austin is accredited by the Council on Occupational Education (COE). Every pastry credential includes at least one industry externship.

Baking and Pastry Program Options

Escoffier’s accreditation page lists each location separately and states that the online programs are available through the Boulder campus.

Boulder, Colorado Campus

The Boulder baking and pastry page and the 2025–26 Boulder catalog describe two residential credentials. The Diploma in Pastry Arts requires 44 quarter credits, at least 80% of the 760 scheduled hours, a 180-hour Pastry Industry Externship, and a 2.0 cumulative GPA. The AOS in Baking and Pastry requires 90 quarter credits, 80% of 1,340 scheduled hours, two 180-hour externships (12 weeks in total), and a 2.0 GPA.

Austin, Texas Campus

The Austin baking and pastry page and the 2025–26 Austin catalog list a Diploma in Pastry Arts (44 quarter credits, 760 clock hours, 30 weeks) and an AAS Degree in Pastry Arts (90 quarter credits, 1,340 clock hours, 60 weeks). The diploma includes one 180-hour externship and the AAS includes two, totaling 360 hours. Austin is authorized by the Texas Higher Education Coordinating Board to award the AAS. A hybrid AAS was offered earlier, but the February 2026 supplement says it is no longer accepting new enrollments.

Online Pastry Programs

The online baking and pastry page lists two programs, both detailed in the Boulder catalog’s distance learning section. The Diploma in Professional Pastry Arts requires 59 quarter credits, at least 80% of 910 scheduled hours, a 160-hour industry externship, and a 2.0 GPA. The online AOS in Baking and Pastry matches the residential degree at 90 quarter credits and 1,340 clock hours, with two 180-hour externships. Courses combine weekly live sessions with self-paced lessons, and Escoffier estimates 15–23 hours per week of schoolwork.

Curriculum and Baking Courses

Both campus diplomas, both campus degrees, and the online AOS are built on the same four pastry courses. The quarter credits differ slightly by campus:

  • Fundamentals of Baking and Pastry (10 credits in Boulder and online; 11 in Austin)
  • Patisserie (9 credits)
  • Confiserie and Artisan Baking (9 credits)
  • Global and Contemporary Cuisine (10 credits in Boulder and online; 9 in Austin)
  • Pastry Industry Externship (6 credits each; one in the diplomas, two in the degrees)

Topics include baking science, breads, pies, cakes, plated desserts, frozen desserts, chocolate, sugar work, and wedding cakes. Boulder’s AOS, both residential and online, adds Menu Design and Management, Purchasing and Cost Control, Foodservice Management, Building Your Own Business, Foodservice Math and Accounting, Business and Professional Communications, Technical Writing for the Hospitality Industry, World History and Culture from the Culinary Perspective, and The Science of Nutrition. Austin’s AAS adds Restaurant Operations, Culinary Entrepreneurship, and five general education courses, including College Algebra.

The online Diploma in Professional Pastry Arts uses its own sequence: two Fundamentals of Baking and Pastry courses, Contemporary Pastry Arts, Global Pastry Arts, two Foundations of Bread courses, Confiserie, and Cake Design and Decorating, plus four business courses and the externship.

Tuition and Additional Costs

Escoffier publishes one total price per program, with no residency-based rates. Boulder and online prices come from the Boulder catalog addendum, effective August 18, 2026. Austin prices come from the Austin catalog supplement, effective February 17, 2026. All six totals also appear on the tuition page.

AAS Degree in Pastry ArtsAustin campus90 quarter credits$40,535

AOS in Baking and PastryOnline90 quarter credits$34,425

Each total includes tuition, a uniform, a toolkit ($350), and an optional $250 technology fee charged only to students who take a school-issued laptop or Chromebook. On campus, the uniform is $225 and the degrees add $200 in coursepacks. Online, the uniform is $75.

Campus totals exclude books. The Boulder addendum lists a $200 Professional Baking eBook and a $100 food manager certification for pastry students, and the Austin supplement lists the same two items. Online eBooks are included in tuition. Both campuses charge $750 to retake a course. Boulder charges a $150 international student services fee, and Austin charges a $300 international student documentation fee.

Admissions and Financial Aid

Boulder applicants must be at least 16, sign an enrollment agreement (with parent or guardian permission if under 18), prove high school completion through a diploma, GED, HiSET, TASC, or similar document, and complete an admissions interview. Austin’s requirements are similar and add a facility tour and state disclosure forms. Online programs have no application fee and require a computer, high-speed internet, and a device that takes photos. Escoffier offers several start dates each year but notes that not every program runs on every date.

Both campuses participate in federal student aid, and the catalogs describe Pell Grant and Direct Loan procedures. The Boulder catalog says VA education benefits may be available for Boulder campus and online programs. Criminal background checks or drug tests required by externship sites can affect a student’s ability to finish.

Career Preparation and Transfer Considerations

The catalogs name baker, pastry cook, pastry assistant, and assistant pastry chef roles in hotels, restaurants, bakeries, and country clubs as entry-level targets. Online students also complete hands-on externships in a foodservice establishment. Escoffier states that it does not guarantee employment or salary.

Escoffier awards quarter credits and does not guarantee that other schools will accept them. Boulder lists articulation agreements with the Culinary School of Fort Worth, Ecole Ducasse in Paris, and Escoffier’s Austin campus, and Austin lists one with Ecole Ducasse. Students cannot enroll in two Escoffier programs at once, though the registrar may apply credits from a finished program to a new one.

  • How are externship sites found near me, and what screening do they require?
  • What will I pay after grants and scholarships, and how much would I need to borrow?
  • Would a community college or university near me accept any of my quarter credits?
