Culinary Institute Lenotre Baking and Pastry Programs

Culinary Institute Lenotre is a private, for-profit culinary college in north Houston, founded by French pastry chef Alain Lenôtre. It offers two baking credentials: a 100-quarter-credit Associate of Applied Science Degree in Baking and Pastry Arts and a 57-quarter-credit Elite Diplôme in Baking and Pastry Arts. Both are built on four 10-week pastry labs and end with an externship.

The school is accredited by the Accrediting Commission of Career Schools and Colleges (ACCSC), authorized by the Texas Higher Education Coordinating Board to grant associate and bachelor’s degrees, and regulated by the Texas Workforce Commission. Its credits are quarter credits, and costs are published as program totals rather than per semester. Details below come from the student catalog effective August 4, 2026.

Baking and Pastry Program Options

Lenotre teaches pastry in dedicated labs across its two Houston buildings: two baking and pastry labs in the North Building on Allensby Street and four pastry décor labs in the South Building on the North Freeway. Hands-on labs meet in person, while most academic and management courses are taught online. Full requirements are in the student catalog.

Associate of Applied Science in Baking and Pastry Arts

The AAS in Baking and Pastry Arts requires 100 quarter credits. Students take four required pastry labs, one lab elective (Fundamentals of Cuisine or Advanced Artistic Skills of Pastry Décor), 16 credits of hospitality management courses, and 23 credits of academics including college math, English composition, public speaking, and introductory French or Spanish. The degree also requires Wine Fundamentals, and students under 21 take Hospitality Financial Management instead. It ends with a 190-hour externship.

The catalog bases the 100-week length on a three-quarter-time schedule, with full time available on request. The program web page gives a shorter figure of 90 weeks, so ask admissions which schedule the quoted length assumes.

Elite Diplôme in Baking and Pastry Arts

The Elite Diplôme keeps the lab sequence and drops the academic and management coursework. It includes the same four pastry labs and one 10-week elective, either Fundamentals of Cuisine or Advanced Artistic Skills of Pastry Décor, followed by a 10-week practicum. The full-time schedule is four hours a day, four days a week.

Curriculum and Baking Courses

Each lab is a 180-hour, 10-credit course. The catalog describes the sequence this way:

  • Fundamentals of Baking and Pastry Level 1: sanitation, tarts, brioche, puff pastry, croissants, Danish, custards, and stacked cakes
  • Fundamentals of Baking and Pastry Level 2: choux paste, signature Lenôtre cakes, mousse cakes, ice creams and sorbets, celebration cakes, and a pastillage showpiece
  • Advanced Baking and Pastry Level 3: chocolate showpieces, croquembouche, caramel work, and advanced cake finishing
  • Artistic Skills of Baking and Pastry Level 4
  • Elective Level 5, Advanced Artistic Skills of Pastry Décor: advanced cake décor, sugar and chocolate showpieces, and wedding cakes

The externship or practicum is 190 hours at an outside establishment. Students recommended by their program director and approved by the school can complete it at international sites, including Puebla, Mexico, and Nice, France, or at U.S. sites outside the Houston area.

Tuition and Additional Costs

Lenotre charges $393 per quarter credit for the AAS and $357 per quarter credit for diploma programs. Required fees include a $50 application fee, a $50 enrollment fee, a $150 graduation fee, a one-time technology fee ($300 for the AAS, $100 for the diploma), and a program lab fee. The catalog’s cost summaries give these totals:

ProgramQuarter creditsTuitionRequired fees (including lab fee)Tuition and feesPublished total with supplies
AAS in Baking and Pastry Arts100$39,300$11,505$50,805$55,009
Elite Diplôme in Baking and Pastry Arts57$20,349$10,850$31,199$33,136

Lab fees make up most of the required fees: $10,955 for the AAS and $10,500 for the diploma. The published totals also add the tool kit ($933), uniforms and linens (about $476 for the AAS and $275 for the diploma), and books and binders (about $2,795 and $728). Supplies are bought at the campus shop, La Boutique, and prices can change.

None of these figures include housing, transportation, or optional externships outside Houston. The catalog lists those at $2,000 for domestic sites and $2,500 for international sites, plus travel costs. Students who fail a course pay to retake it.

Admissions and Financial Aid

Applicants start by scheduling a personal interview and campus tour with admissions, then complete the application and meet with a financial aid officer. They need a high school diploma, GED, or postsecondary degree before the first class. AAS applicants take the ACCUPLACER unless they submit an SAT of 900 or ACT of 16. Because some courses are online, applicants also complete a computer literacy questionnaire. New students attend orientation the week before their class start, and the college posts start dates for each term.

Lenotre has been authorized to administer federal Title IV aid since 2003. It is also approved by the Texas Veterans Commission for VA education benefits. The financial aid office and catalog list scholarships for high school students, including $2,000 competition awards and a $1,000 merit award for recent graduates.

Career Preparation and Transfer Considerations

According to the catalog, the diploma prepares graduates for entry-level work as pastry cooks, bakers, and cake decorators. The AAS adds supervision and management training for roles such as pastry sous chef and catering assistant manager. The catalog’s history section says the AAS received programmatic accreditation from the American Culinary Federation Education Foundation in 2010, so applicants should ask whether that accreditation is current.

Quarter credits from a career college may not transfer easily to Texas public universities, which use semester credits. Lenotre also offers its own Bachelor of Science degrees in Culinary Arts and in Hospitality and Restaurant Management, and the catalog describes how prior coursework can be evaluated for credit.
