Grayson College Baking and Pastry Programs

Grayson College in Denison treats pastry as an add-on specialization rather than an entry-level program. Its only baking credential, the 12-credit Enhanced Pastry Arts Certificate, is open to students who have already completed the college’s Culinary Arts Associate of Applied Science (AAS). The four courses cover breads and rolls, cake decorating, plated desserts, and bakery operations and management.

Classes take place at the Culinary Arts Center in the northeast corner of the Main Campus, home to Six Ninety One, the student-run restaurant. Grayson states that its Culinary Arts associate degree and certificate programs are accredited by the American Culinary Federation Education Foundation. Details below come from the 2026–27 Grayson College Catalog.

Baking and Pastry Program Options

Grayson lists its credentials on the Hospitality and Culinary Arts catalog page, which also includes Culinary Arts and Hospitality Management degrees, certificates, and occupational skills awards. The pastry credential is the only one with baking or pastry in its title.

Enhanced Pastry Arts Certificate

The certificate adds four 3-credit pastry courses on top of a completed culinary degree. The catalog explains that the Culinary Arts AAS supplies the foundational skills and prerequisites for this advanced, pastry-focused work. Each of the four courses lists Fundamentals of Baking and Advanced Pastry Shop as prerequisites, and both of those are already required in the AAS.

Because of the degree requirement, the full route is 72 credits: 60 for the Culinary Arts AAS and 12 for the pastry certificate. Grayson does not publish a separate semester plan for the certificate.

The Culinary Arts AAS as the Starting Point

The Culinary Arts program is where pastry students begin. Its 60-credit AAS includes sanitation, basic and advanced food preparation, garde manger, international cuisine, dining room service, food and beverage controls, general education, and a one-credit practicum. Pastry electives can also count toward the 24-credit Culinary Arts Basic Chef Training Certificate, which lets students choose electives from five PSTR courses, including three of the four certificate courses.

Curriculum and Baking Courses

The 2026–27 catalog lists these four required courses for the certificate, each with lecture and lab hours:

  • Breads and Rolls (3 credits): chemically leavened and yeast-raised breads and rolls in commercial quantities
  • Cake Decoration 1 (3 credits): cake decorating skills, concepts, and techniques
  • Plated Desserts (3 credits): hot and cold individual desserts, à la minute components, and station timing for restaurant service
  • Bakery Operations and Management (3 credits): retail bakery management, marketing, supervision, cost control, pricing, and personnel issues

Before reaching these courses, students take Fundamentals of Baking and Advanced Pastry Shop within the AAS. Those courses cover doughs, quick breads, pies, cakes, cookies, and tarts, followed by classical and international pastries, ice creams, chocolate work, and decorations. The catalog also notes that many full-length culinary courses may be taken noncredit through Grayson’s Continuing Education division.

Tuition and Additional Costs

Grayson’s 2026–27 tuition and fees page lists tuition of $50 per credit in-district (Grayson County), $100 out-of-district, and $160 for non-residents. A $50 per-credit fee (student services, general use, and technology) applies to everyone, making the combined rates $100, $150, and $210 per credit. Students also pay a $20 matriculation fee and a $6 ID card fee each semester. The college does not publish a term count for the certificate, so these estimates assume one semester for 12 credits:

ProgramCreditsEstimated in-district tuition and feesEstimated out-of-district tuition and feesEstimated out-of-state tuition and fees
Enhanced Pastry Arts Certificate (1 semester assumed)12$1,226$1,826$2,546

These figures cover only the certificate, not the prerequisite AAS. They exclude lab fees, books, uniforms, tools, and living costs. Grayson notes that Oklahoma residents receive a waiver down to the out-of-district rate, which matters for a campus this close to the state line. The Victor E. Bundle course materials program adds $29.50 per credit plus tax unless a student opts out.

The same page lists culinary lab fees. A $50 fee applies to all four certificate courses, and a $72 fee applies to Breads and Rolls, Cake Decoration 1, and Plated Desserts, bringing lab fees to at least $416. The college’s culinary cost page still shows 2022–23 figures of $110.50 for a chef uniform and $595.99 for tool kits and knives, so students should ask for current prices.

Admissions and Financial Aid

Grayson’s enrollment steps are to apply, upload a high school or GED transcript and any college transcripts, submit a meningitis vaccination record or exemption if under 22, show TSI test scores or an exemption, and meet with a success coach to register. The pastry certificate adds one condition: students must have completed the Culinary Arts AAS first. The college does not describe a separate program application.

Grayson lists several culinary-specific endowed scholarships on its culinary cost page. The catalog does not say whether a 12-credit certificate earned after a degree qualifies for federal aid, so students should check with the financial aid office before enrolling.

Career Preparation and Transfer Considerations

Most graduates will hold both a culinary AAS and a pastry certificate, which may help them apply for kitchen roles that include dessert work, or for bakery jobs that call for management skills. Bakery Operations and Management covers pricing, cost control, and personnel, topics that apply to running or supervising a retail bakery. Local employers named in the catalog include Choctaw Casino, WinStar Casino, and area hotels and restaurants.

The certificate is career-focused and is not designed for transfer. General education courses in the AAS, such as composition, math, psychology, and speech, are more likely to transfer than PSTR coursework.
