San Joaquin Delta College Baking and Pastry Programs

San Joaquin Delta College runs its own retail bakery as a classroom. Baking and pastry students in Stockton produce and sell breads, desserts, and coffee bar items at the Artisan Bakery, which opens to the campus on select days each semester, and two required courses are built around that operation.

Delta’s current catalog, labeled Summer 2026 to Summer 2027, lists a 26-unit Baking and Pastry Certificate of Achievement and a Baking and Pastry Associate in Science degree of at least 60 units. Both use the same eight courses, covering production in the kitchen and service at the counter.

Baking and Pastry Program Options

Both awards sit in the college’s Culinary Arts program, alongside a Culinary Arts certificate and two culinary degrees. The catalog says training takes place in the Artisan Bakery, where students build both back-of-house and front-of-house skills.

Baking and Pastry Certificate of Achievement

The Baking and Pastry Certificate of Achievement requires 26 units, and every course must be passed with a C or better. The catalog describes it as preparation for immediate employment in commercial bakeries, pastry shops, and cafes, with training in artisan bread, retail service, merchandising, point-of-sale operation, and basic bakery marketing.

Baking and Pastry, Associate in Science

The Baking and Pastry, A.S. uses the same 26-unit major. Students add either Delta’s 27-unit associate degree general education pattern or the 34-unit Cal-GETC pattern, then electives as needed to reach 60 units. The catalog advises double-counting major courses toward general education where possible.

Curriculum and Baking Courses

The eight required courses are the same for the certificate and the degree:

  • Baking (3 units): basic dessert and bread production from quantity formulas, plus care and use of bakeshop equipment
  • European Pastry Production (4 units): cheesecakes, tortes, tarts, tea cookies, petit fours, plated desserts, and specialty breads, with 162 lab hours
  • Plated Desserts (3 units): chocolate tempering, tuiles, frozen desserts, sauces, sugar garnishes, mousses, and curds
  • Retail Bakery Production (4 units): seasonal and specialty production planning and the financial management of a bakery
  • Retail Bakery Service and Marketing (4 units): customer service, point-of-sale, display, packaging, and promotion, practiced in the Artisan Bakery
  • Commercial Food Preparation (4 units): knife, tool, and equipment skills in a commercial kitchen
  • Sanitation and Safety (2 units) and Food and Beverage Cost Technologies (2 units): food safety, HACCP, recipe conversion, and cost percentages

The sequence matters. European Pastry Production requires a C or better in Baking, and Plated Desserts and both retail bakery courses require a C or better in Baking and European Pastry Production. The catalog lists Baking and European Pastry Production as typically offered every term, Plated Desserts every spring, and Retail Bakery Production every fall. No typical term is listed for Retail Bakery Service and Marketing.

Tuition and Additional Costs

Delta’s tuition and fees page lists an enrollment fee of $46 per unit for California residents. Non-residents pay $328 per unit in tuition plus the $46 enrollment fee, or $374 per unit. Each fall and spring semester also carries a $26 student health fee and a $2 student representation fee.

ProgramCreditsEstimated in-state tuition and feesEstimated out-of-state tuition and fees
Baking and Pastry Certificate of Achievement (two semesters assumed)26$1,252$9,780
Baking and Pastry, A.S. (four semesters assumed)60$2,872$22,552

Each estimate multiplies units by the per-unit rate and adds $28 in fees per semester. Delta publishes no semester-by-semester plan, so the estimates assume two semesters for the certificate and four for the degree. The prerequisite chain means many certificate students will need three or more semesters, and each extra one adds $28. Figures are before financial aid and leave out the $10 Student Activity Fee, which the catalog calls optional, plus parking ($30 per semester), books, and living costs.

Uniforms and tools are a separate cost. The college’s uniforms, tools, and books page lists a chef coat at $40.95, chef pants at $27.95, an apron at $14.95, a skull cap at $10.95, and a knife and tool set at $179.99, or about $275 before embroidery and tax. Lab students must be in full uniform by the third week of the semester. The college says exact costs vary by semester and that instructors go over other required items on the first day.

Admissions and Financial Aid

Delta has no separate admission to the baking program. New students create an OpenCCC account and apply through CCCApply, watch their personal email for login instructions, and then register for classes. Baking, the first course in the sequence, has no prerequisite. It carries an advisory of Sanitation and Safety with a C or better or a ServSafe Manager certificate.

The catalog’s fee section says enrollment fee assistance is available to qualified students through the Financial Aid and Scholarships Department. That is the office to ask about the California College Promise Grant, which applies to the enrollment fee for eligible California residents, and about federal aid for the certificate.

Career Preparation and Transfer Considerations

The catalog ties both awards to work in commercial bakeries, pastry shops, cafes, and related food service operations. The Artisan Bakery gives students practice with production timelines, displays, order taking, and sales tracking in front of real customers, and the newer service and marketing course adds bakery branding and social media promotion.

The catalog marks Baking, European Pastry Production, Commercial Food Preparation, Sanitation and Safety, and Food and Beverage Cost Technologies as transferable to the California State University system. The A.S. is described as a career degree that can also support further study, so students aiming at a bachelor’s program should confirm a plan with a counselor.
