Woodland Community College’s baking certificate is tied to its Lake County Campus in Clearlake rather than the main campus in Woodland. That campus is home to Aromas Restaurant and Café, a student-run operation open to the public. The Baking Certificate of Achievement requires 16.5 to 17.5 units and pairs two baking labs with a savory cooking course, an internship, catering, and a ServSafe Manager class.
It is the only baking credential in the 2026–27 catalog, which also lists a Culinary Arts certificate and an Associate in Arts. Every required course in the Baking certificate is also required for the A.A., so the certificate can serve as a first stage of the degree.

Baking and Pastry Program Options
The college’s Culinary Arts program page shows all three culinary awards and tags each one to the Lake County Campus. The same page says culinary courses are offered at both the Lake County and Woodland campuses, so check the class schedule for where each course meets in a given term.
Baking Certificate of Achievement
In the 2026–27 catalog, the Baking certificate has seven required courses totaling 14.5 units and one elective of 2 or 3 units. The catalog says students learn food safety and handling, recipe conversions, equipment selection, French techniques for pastry and dessert components, and modern baking methods. Its listed outcomes include costing a standardized pastry recipe and creating a bake shop or restaurant business plan.
A Certificate of Achievement is the state-approved type of certificate at California community colleges. The college describes the target jobs as baking and pastry chef, bakery manager, and pastry shop owner, with employers that include restaurants, hotels, casinos, and bakeries.
Continuing Into the Culinary Arts A.A.
The Culinary Arts A.A. major requires 30 to 31 units, within a degree of at least 60 units including general education. It contains all seven required Baking certificate courses and both of its elective choices. To finish the major, a Baking certificate holder would add Art of Professional Cooking, The Professional Chef, Menu and Recipe Management, and one more elective. The separate Culinary Arts Certificate of Achievement (27–28 units) leaves out Advanced Baking and Pastry.
Curriculum and Baking Courses
Required courses and electives, as listed in the catalog:
- CUL20 Principles of Baking (3 units): yeast and other leavened doughs, batters, cookies, pastries, pies, fillings, and toppings; 18 lecture and 108 lab hours
- CUL21 Advanced Baking and Pastry (3 units): French techniques and European desserts, cakes, plated desserts, and scaling items for commercial baking; 18 lecture and 108 lab hours
- CUL10 Principles of Professional Food Preparation (3 units): foundational cooking methods, tools, weights and measures, and recipe conversions
- CUL6 Food and Beverage Service Management (2 units): service, purchasing, cost control, menu planning, and the business side of food operations
- CUL56 Catering and Event Management (2 units): planning and producing buffets, banquets, and receptions, including community catered events
- CUL32 Culinary Internship (1 unit): 54 hours of faculty-supervised work at an approved job site
- CUL54 ServSafe Manager (0.5 unit): food safety standards and the official exam, which leads to a five-year certification when passed
- One elective: CUL51 Garde Manger (3 units) or CUL55 Culinary Nutrition (2 units)
Two details in the catalog deserve a closer look. Culinary Nutrition lists Menu and Recipe Management as a prerequisite, a course that is not part of the Baking certificate, so Garde Manger may be the simpler elective. Also, the program list shows Food and Beverage Service Management at 2 units, while the course description shows 3.0 units. A counselor can confirm which figure applies.
Tuition and Additional Costs
The 2026–27 catalog and the college’s tuition and fees page list an enrollment fee of $46 per unit. According to the catalog, non-residents pay an additional $329 per unit effective Fall 2026, or $375 per unit in all. Every student pays a $10 health fee each semester. A $2 student representation fee is optional.
| Program | Credits | Estimated in-state tuition and fees | Estimated out-of-state tuition and fees |
|---|---|---|---|
| Baking Certificate of Achievement (two semesters assumed) | 16.5–17.5 | $779–$825 | $6,208–$6,583 |
Each estimate multiplies units by the per-unit rate and adds two $10 health fees. The low end uses the 2-unit elective and the high end the 3-unit elective. Woodland publishes no semester-by-semester plan for this certificate, so two semesters is an assumption. The figures are before financial aid and exclude the optional representation fee, parking ($40 a semester), books, uniforms, tools, and living costs.
The catalog does not list a uniform, knife kit, or lab fee for the culinary courses. It notes in general that students may be required to provide instructional materials for a course and that books and direct school expenses can average $600 to $700 a year.
Admissions and Financial Aid
The catalog names three steps for entering students: complete the online CCCApply application, complete the online orientation, and meet with a counselor to build an educational plan and choose classes. The Apply and Register page walks through them. The catalog lists no separate admission requirement for the Baking certificate, though course prerequisites apply.
For California residents who qualify, the California College Promise Grant pays the enrollment fee. The catalog also describes a Woodland Community College Promise award for full-time students who do not qualify for that grant, and a Clearlake College Promise for eligible residents of the Konocti Unified School District area. Ask the financial aid office which of these, and which federal grants, apply to a certificate of this length.
Career Preparation and Transfer Considerations
Work experience is written into the certificate through the one-unit internship, which stresses work habits and competencies shown on the job. Aromas adds a second setting. The college describes it as a student-run restaurant that sells grab-and-go food and espresso drinks and offers dine-in lunch service. Students are also encouraged to join the Culinary Club.
Both baking courses, the food preparation course, the service management course, and the internship are marked transferable to CSU, and Principles of Baking carries the statewide C-ID number HOSP 180X. Garde Manger, Culinary Nutrition, ServSafe Manager, and Catering and Event Management are marked not transferable.
Who May Find This Certificate a Good Fit?

| Get supervised work hours | A 54-hour internship is required |
| Keep the door open to a degree | All required certificate courses count toward the Culinary Arts A.A. major |
Questions to Ask Before Applying
- Are Principles of Baking and Advanced Baking and Pastry taught only at the Lake County Campus, and in which semesters?
- Is Food and Beverage Service Management 2 or 3 units, and does that change the certificate total?
- Can the Culinary Nutrition prerequisite be met within the certificate, or should I plan on Garde Manger?
- What uniform, knife, and supply purchases do the kitchen courses require?
- Which non-resident rate is being charged? The catalog says $329 per unit from Fall 2026, while the fees page shows $319.
