Saddleback College Baking and Pastry Programs

Saddleback College does not teach its culinary and baking courses on the main campus in Mission Viejo. The program is based at Saddleback@ATEP, 1634 Valencia Avenue in Tustin, which the college describes as a 20,000-square-foot facility with four commercial kitchen labs, a 70-seat student-run restaurant, and a coffee bar that sells pastries made by baking students.

The 2026–27 fall catalog lists three baking credentials that stack: an Introduction to Baking and Pastry Certificate of Achievement (18–20 units), an Advanced Baking and Pastry Certificate of Achievement (38–40 units), and an Advanced Baking and Pastry A.S. of at least 60 units.

Baking and Pastry Program Options

Requirements below come from the 2026–27 fall catalog (PDF). The unit ranges exist because students who hold a valid California ServSafe certification may have the 2-unit Sanitation and Safety course waived. Both certificates are Certificates of Achievement.

Introduction to Baking and Pastry Certificate of Achievement

The introductory certificate requires Sanitation and Safety or ServSafe certification plus six 3-unit courses: Culinary Principles I, Food Preparation Essentials, Baking Fundamentals I, Baking Fundamentals II, Management, Leadership and Training, and Food and Beverage Operations. The catalog describes it as preparation for entry-level work in bakeries, restaurants, catering, and hotels.

Advanced Baking and Pastry Certificate of Achievement

The advanced certificate is described as a stackable award built on the introductory one. It keeps all seven of those requirements and adds Introduction to Food Systems, Introduction to Culinary Arts, Contemporary Topics in Food Service, Principles of Artisan Baking, Advanced Baking and Pastry, Sugar Confectionery, Chocolate Confectionery, and Hospitality Cost Control, for 38–40 units.

Advanced Baking and Pastry Associate in Science

For the A.S., students complete the same 38–40 unit core, the college’s general education requirements, and electives to reach a minimum of 60 units with an overall GPA of 2.0. At least 12 units must be completed at Saddleback College.

Curriculum and Baking Courses

Most kitchen courses are 3 units with two lecture hours and three lab hours a week. The baking sequence includes:

  • Baking Fundamentals I: tools, ingredients, measuring, and basic mixing methods for quick breads, lean and enriched yeast doughs, cookies, cupcakes, tarts, and pies
  • Baking Fundamentals II: puff pastry, foam cakes, European tortes, meringues, cake decorating, chocolate handling, and pate a choux
  • Principles of Artisan Baking (4 units, seven lab hours a week): traditional fermentation, baker’s math, mixing, shaping, and production deadlines
  • Advanced Baking and Pastry: specialty pastries, cakes and fillings, puff dough, creams, and custards
  • Sugar Confectionery and Chocolate Confectionery (1 unit each): caramels, nougats, pastillage, pulled and blown sugar, tempering, truffles, and molded bonbons
  • Supporting courses: culinary principles, food preparation science, food systems, cost control, operations, and leadership

Baking Fundamentals I has no prerequisite. It is the prerequisite for Baking Fundamentals II, Principles of Artisan Baking, and both confectionery courses, while Advanced Baking and Pastry requires Culinary Principles I and Baking Fundamentals I. Course descriptions state that students must follow the Culinary Department dress standards.

Tuition and Additional Costs

The 2026–27 fall catalog sets the enrollment fee at $46 per unit for California residents. Non-residents pay that fee plus $409 per unit in non-resident tuition and a $57 per unit capital outlay fee, or $512 per unit. A $28 health fee is charged each fall and spring semester ($22 in summer).

ProgramCreditsEstimated in-state tuition and feesEstimated out-of-state tuition and fees
Introduction to Baking and Pastry Certificate of Achievement (two semesters assumed)18–20$976$10,296
Advanced Baking and Pastry Certificate of Achievement (three semesters assumed)38–40$1,924$20,564
Advanced Baking and Pastry A.S. (four semesters assumed)60$2,872$30,832

Each estimate multiplies units by the per-unit rate and adds the $28 health fee for every semester. The catalog has no term-by-term plan for these awards, so the figures assume two semesters for the introductory certificate, three for the advanced certificate, and four for the A.S. Certificate rows use the higher totals of 20 and 40 units; a ServSafe waiver removes 2 units, or $92 for residents. Figures are before financial aid and exclude the optional $2 student representation fee, parking, uniforms, tools, and living costs.

Material and lab fees are set by course under the catalog’s fee policy, and parking rates are posted by the Student Payment Office. The Saddleback@ATEP culinary page says all programs are zero textbook cost. The college does not publish a uniform or tool price.

Admissions and Financial Aid

There is no separate application for the baking awards in the catalog. New students follow the college’s application steps and the catalog’s pre-registration checklist, which includes orientation and math and English placement, before registering. The college posts registration dates and deadlines each term.

According to the catalog, the California College Promise Grant helps eligible California residents and AB 540 students with enrollment fees for the full academic year, with no limit on units. Students are encouraged to file the FAFSA or the California Dream Act Application. The catalog entries do not say whether each certificate qualifies for federal aid, so confirm that with the Financial Aid Office.

Career Preparation and Transfer Considerations

Catalog descriptions point the introductory certificate toward entry-level jobs and the advanced awards toward entry to midlevel roles in bakeries, restaurants, catering, and hotels. The ATEP page mentions apprenticeship opportunities, a student-run restaurant, and an on-site coffee bar stocked by baking students. Ask how baking students are scheduled into those operations.

Culinary Principles I and Food Preparation Essentials are marked as transferable to CSU in the catalog. The baking course entries carry no transfer notation, and the catalog refers students to ASSIST.org and the transfer institution’s catalog for transfer requirements.
