Oxnard College treats baking as its own major. The 2026–27 catalog lists a Baking and Pastry Associate in Science degree, a Baking and Pastry Certificate of Achievement, and a short Baking and Patisserie Proficiency Award, all within the Culinary Arts and Restaurant Management department at 4000 South Rose Avenue.
The major is lab-heavy. It runs 46–48 units and includes a bread course, a bakery operations course, and a course on barista work and bakery-cafe production. The catalog also publishes a term-by-term plan for each credential, starting with a summer session.

Baking and Pastry Program Options
All three credentials appear in the Culinary Arts and Restaurant Management section of the catalog.
Baking and Patisserie Proficiency Award
The Baking and Patisserie Proficiency Award requires 12.5 units: Sanitation and Environmental Control, Culinary Baking Techniques, and Advanced Pastry. The catalog notes that proficiency awards are not state-approved and cannot be recorded on a transcript.
Baking and Pastry Certificate of Achievement
The Baking and Pastry Certificate of Achievement requires 46–48 units, with the range coming from 1 to 3 units of work experience. Every course needs a C or better or a P. The catalog describes it as preparation for entry-level work as a baker or cake decorator, and one of its outcomes is ServSafe certification from the National Restaurant Association.
Baking and Pastry Associate in Science
The Baking and Pastry A.S. adds 24 units of Oxnard College general education to the same major, for 70–72 units. The catalog’s plan of study grid lists only the major courses, so general education has to be fitted around them with a counselor.
Curriculum and Baking Courses
The certificate and degree share these major courses:
- Baking Principles (1 unit): a 52.5-hour lab on scaling recipes, planning a baking schedule, and commercial equipment
- Culinary Baking Techniques (6 units): breads, rolls, Danish and puff pastries, pies, and fillings, with food cost and retail mark-up
- Advanced Pastry (3.5 units) and Cake Decorating and Assembly (2.5 units): plated desserts, tempered chocolate, sauces, and tiered special event cakes
- Introduction to Baking and Pastry (7 units) and Bread Baking Principles (3 units): mixing methods, baker’s math, fermentation, sourdough, and poolish
- Production Planning and Bakery Operations (6 units) and Intermediate Production and Cafe Specialties (4 units): quantity baking, bakery management, and barista practice
- Support courses: sanitation, hospitality industry principles, customer service, nutrition in food service, and work experience
The published plan starts in summer with Baking Principles, sanitation, and the hospitality course (7 units). Fall and spring of year one carry 12 and 7–9 units, and each semester of year two carries 10. One catalog detail needs a counselor’s review: Culinary Baking Techniques lists Institutional Food Production, a 7-unit culinary course, as its prerequisite, and that course is not on any of the three baking course lists.
Tuition and Additional Costs
The catalog’s fees and tuition page lists an enrollment fee of $46 per unit. Non-residents also pay $409 per unit in tuition and a $24 per-unit surcharge, or $479 per unit in all. The health fee is $28 in fall and spring and $23 in summer. A student center fee of $1 per unit is capped at $10 per fiscal year, and the $2 student representation fee can be waived at registration.
| Program | Credits | Estimated in-state tuition and fees | Estimated out-of-state tuition and fees |
|---|---|---|---|
| Baking and Patisserie Proficiency Award (summer plus 2 semesters) | 12.5 | $670 | $6,083 |
| Baking and Pastry Certificate of Achievement (summer plus 4 semesters) | 46 | $2,281 | $22,199 |
| Baking and Pastry A.S. (summer plus 4 semesters) | 70 | $3,385 | $33,695 |
Each estimate multiplies the minimum units by the per-unit rate and adds health, student center, and representation fees for every term in the published plan. The A.S. figure assumes general education fits within the same five terms. Estimates are before financial aid and leave out the optional $10 student activities fee, parking, books, uniforms, tools, and living costs.
The catalog says instructional materials fees, where charged, appear under the course title in the Schedule of Classes. It does not publish a uniform or tool list for the baking courses. A TB test and a ServSafe exam are further costs for students who need them.
Admissions and Financial Aid
Oxnard College has open admission for high school graduates, holders of an equivalency credential, and adults 18 or older who can benefit from instruction. New students apply through CCCApply, complete identity verification, and then register. The baking credentials have no separate program application, but the lab courses carry the TB and ServSafe enrollment limitations noted above.
The college’s fees page says California residents who meet certain criteria may be eligible for the California College Promise Grant. The catalog does not label individual programs as financial aid eligible. The proficiency award is not state-approved, so ask the Financial Aid Office how aid works if it is your only goal.
Career Preparation and Transfer Considerations
According to the catalog, the degree prepares students for entry-level jobs in bakeries, restaurants, hotels, and other foodservice operations, and courses are taught by industry professionals in a commercial kitchen.
The catalog is direct about transfer. The A.S. with local general education was designed for students entering the workforce, and California’s public universities do not offer a bachelor’s degree in baking and pastry. The baking courses are listed as CSU transferable, and Introduction to Baking and Pastry carries the C-ID number HOSP 160.
Which Oxnard College Pathway May Fit You?
| Pathway | May fit students who want |
|---|---|
| Baking and Patisserie Proficiency Award | A three-course start in sanitation, baking, and plated desserts, taken one course at a time |
| Baking and Pastry Certificate of Achievement | The full baking major, including bread, bakery operations, and cafe production, without general education |
| Baking and Pastry A.S. | The same major plus 24 units of general education for an associate degree |

- Can I start in fall or spring if I miss the summer session in the published plan?
- What materials fees, uniforms, and tools do the baking labs require?
- How do I document a TB test and ServSafe certification before the first lab?
- Is the program accredited by the American Culinary Federation? The catalog does not name a programmatic accreditor.
