San Diego College of Continuing Education Baking and Pastry Programs

San Diego College of Continuing Education (SDCCE) charges no tuition for its baking programs. It is the noncredit, adult education college of the San Diego Community College District, and its two baking certificates are noncredit Certificates of Completion. They do not earn college units, although the district has agreements that let completers test for credit at San Diego Mesa College.

The 2026–27 catalog lists Baking and Pastry Arts I and Baking and Pastry Arts II. Each is a two-course program of 225 hours, scheduled over 18 weeks at about 12.5 hours a week, and both are taught at the Educational Cultural Complex on Ocean View Boulevard. Students pay a $75 materials fee per program and buy a uniform and textbook.

Baking and Pastry Program Options

Both certificates appear on SDCCE’s Hospitality and Culinary Arts page, along with class schedules. Required courses are set out in the 2026–27 SDCCE catalog. The web page says “complete one course” for each program while naming two; the catalog lists both courses as required.

Baking and Pastry Arts I (Noncredit Certificate of Completion)

Baking and Pastry Arts I pairs Baking and Pastry Essentials with Baking and Artisanal Breads. Students work through cookies, pies, tarts, dessert sauces, custards, and frozen desserts, then finish with yeasted, non-yeasted, and laminated doughs. SDCCE says the program prepares students for entry-level baker jobs in a commercial bakeshop or restaurant, or for starting a cottage food business.

Baking and Pastry Arts II (Noncredit Certificate of Completion)

Baking and Pastry Arts II pairs Advanced Pastries and Cakes with Chocolate and Sugar Fundamentals. It moves into American-style cakes, European tortes, frostings and fillings, mini pastries, petit fours, meringues, and chocolate and sugar confections, and it touches on buffet production and showpieces. The college describes the target roles as entry to intermediate-level baker, chocolatier, confectioner, and cake designer.

Curriculum and Baking Courses

The catalog describes four Foods and Nutrition (FDNT) courses across the two certificates:

  • Baking and Pastry Essentials (FDNT 661): beginning bakeshop skills, baking theory, ingredients, recipe reading and measuring, basic math, and equivalencies
  • Baking and Artisanal Breads (FDNT 662): yeasted and non-yeasted breads and doughs from around the world, with their cultural origins
  • Advanced Pastries and Cakes (FDNT 663): specialty occasion cakes, mixing methods, frostings, decorating mediums, plate presentation, and petit fours
  • Chocolate and Sugar Fundamentals (FDNT 664): tempering, chocolate and sugar decorations and confections, tools, and beginner displays

Each course carries an advisory, not a requirement, of Intro to Hospitality Careers. The catalog does not say that Baking and Pastry Arts I must be finished before Baking and Pastry Arts II. A different SDCCE certificate, Culinary Arts, includes a 108-hour Baking and Pastry Fundamentals module, but that 610-hour program is a general cooking credential taught at the West City campus.

Tuition and Additional Costs

SDCCE’s free tuition page states that students pay no tuition and no enrollment or registration fees for any SDCCE course, and that there are no residency requirements or higher charges for out-of-state students. The state funds the classes. Program costs are limited to materials and supplies:

ProgramHoursTuitionMaterials fee
Baking and Pastry Arts I (noncredit)225$0$75
Baking and Pastry Arts II (noncredit)225$0$75

Completing both certificates would mean $150 in materials fees, which cover ingredients and supplies. No per-unit estimate applies because the courses carry no units. The table leaves out required purchases that SDCCE does not price on its program page: the SDCCE uniform and the On Baking textbook. It also leaves out parking, which the catalog lists at $40 per semester for an automobile permit, and transportation.

Admissions and Financial Aid

The college’s steps to enroll are to apply online, set up a mySDCCD student portal, and enroll in classes. A mandatory orientation is required before enrolling in either baking program. The catalog says the district serves adults 18 and older, and that some classes fill on a first-come, first-served basis. It also states that federal immigration rules bar people in the United States on F-1, B-1, or B-2 visas, or with a border crossing card, from attending SDCCE classes.

Since there is no tuition to cover, the enrollment fee waivers used at credit colleges do not come into play. SDCCE lists scholarships on its website, and students who need help with the materials fee, uniform, or textbook can ask a counselor or a campus Welcome Center about support.

Career Preparation and Transfer Considerations

Noncredit hours do not transfer as units. The catalog does list credit-by-exam agreements between SDCCE and the district’s credit colleges, shown as active through summer 2027. Under those listings, Baking and Pastry Essentials is matched to Mesa College’s 3-unit Fundamental of Baking Theory. The other three baking courses, taken together, are matched to Mesa’s 3-unit Baking and Pastry lab. Both Mesa courses are required for Mesa’s Baking and Pastry Certificate of Achievement.

Credit is not automatic. Students must meet the eligibility criteria and pass an exam designed by the college department, so a counselor should confirm the process before anyone plans around it. SDCCE notes that its programs also build workplace skills such as interpersonal skills, time management, and conflict resolution.
