Estrella Mountain Community College Baking and Pastry Certificate

Estrella Mountain Community College (EMCC) in Avondale is the primary college for the Maricopa district’s Commercial Baking and Pastry Certificate of Completion (CCL), an 18–20 credit credential taught in the culinary lab in Agave Hall. It is the West Valley’s public-college route into bakery and pastry work, and the only EMCC credential with baking in its title.

The certificate is short, but its courses do not all run every term. In the 2026–27 class schedule, EMCC listed most hands-on baking labs once a year, mainly on Monday and Wednesday evenings, and one required course did not appear at all. Planning the sequence with an advisor matters more here than the credit total suggests.

Baking and Pastry Program Options

EMCC’s culinary program lists four awards: a Culinary Arts AAS, Culinary Arts I and II certificates, and the baking certificate. Only the last is a baking and pastry credential.

Commercial Baking and Pastry Certificate of Completion

The district’s 2026–27 curriculum record names EMCC as the primary college for this CCL and Scottsdale Community College as the other campus offering it. The record describes training for entry-level positions, with a focus on classic and modern desserts, artisan and specialty breads, breakfast pastries, decorative showpieces, and special occasion cakes.

The credit range depends on sanitation. Students either take the 2-credit Food Service Sanitation course or present a ServSafe food protection manager certification for no credit. EMCC’s pathway map places 6–8 credits in the first term and 12 in the second.

Curriculum and Baking Courses

Seven requirements make up the certificate, five of them 3-credit kitchen courses:

  • Commercial Baking Techniques: breads, cakes, pies, pastry, cookies, fillings, and icings in a commercial bakery setting
  • Food Service Sanitation (2 credits), or ServSafe food protection manager certification
  • Bakery Operations or Food Service Management
  • Classical Desserts: tarts, puff pastry, specialty cakes, Bavarian creams, mousses, custards, and soufflés
  • Specialty Breads and Breakfast Pastry: artisan breads, laminated and sweet doughs, Danish, croissant, and brioche
  • Advanced Pastry Arts or Specialty Cakes
  • Professional Pastry Techniques: frozen desserts, multi-component cakes, individual pastries, and chocolates

Commercial Baking Techniques, passed with a C or better, is the prerequisite for the later labs unless the program director gives permission. EMCC’s program page says the college does not currently offer Advanced Pastry Arts, so Specialty Cakes fills that slot in Avondale.

The Fall 2026 and Spring 2027 schedules showed Commercial Baking Techniques in both semesters, Classical Desserts in fall only, and Specialty Breads and Specialty Cakes in spring only. Most labs met Monday and Wednesday from 4:00 to 8:10 p.m. in eight-week blocks, while Specialty Breads met on Fridays from 7:30 a.m. to 4:00 p.m. Professional Pastry Techniques was not on EMCC’s schedule in either semester, although Scottsdale listed it in fall.

Tuition and Additional Costs

EMCC’s 2026–27 tuition page sets the rate at $97 per credit for Maricopa County residents. Residents of other Arizona counties, apart from Apache and Greenlee, pay the same rate through reciprocal agreements, so this is the in-state figure used here. Students classed as out-of-state pay $372 per credit. A $15 registration fee is charged each semester, and there is no full-time flat rate. Based on the two terms in the pathway map:

ProgramCreditsEstimated in-state tuition and feesEstimated out-of-state tuition and fees
Commercial Baking and Pastry CCL (2 terms)20$1,970$7,470

Each figure is 20 credits of tuition plus two registration fees. A student who brings a ServSafe manager certification needs 18 credits, which lowers the totals to $1,776 and $6,726. Every extra semester adds $15.

Course fees, uniforms, tools, books, and the food handler card are not included. In the 2026–27 schedule, each baking lab at EMCC carried a $125 course fee and Food Service Sanitation carried $36, which comes to about $661 if all five labs are charged at that rate. The culinary program’s uniform and tool list prices two sets of uniforms at $212–$246 and the Baking and Pastry Tool Kit at $353, with a note that prices can change. Current rates are on the tuition and fees page.

Admissions and Financial Aid

EMCC is open admission, but the culinary program page sets out its own steps. Students enroll in the college, meet with a Business, Entrepreneurialism, and Management advisor, and then register with help from a culinary advisor. Entry requires a C or better in the college’s developmental English, reading, and math courses, or placement above them.

New students must also attend a Culinary Institute Orientation, held in Regions Restaurant in Agave Hall before each semester, where uniforms and tools are reviewed. A Maricopa County food handler card is needed before classes start and must be kept current.

Neither the program page nor the curriculum record states whether this certificate qualifies for federal aid on its own, so that question belongs with the financial aid office. The culinary page also points to the Avondale Edge EMCC Culinary Scholarship.

Career Preparation and Transfer Considerations

The curriculum record links the certificate to work as a baker. The culinary program runs Regions, an on-campus restaurant open for lunch on Thursdays in fall and spring, although EMCC does not say what part baking certificate students play in it. No American Culinary Federation accreditation is stated for this certificate.

EMCC has no baking degree. The nearest continuation in Avondale is the Culinary Arts AAS, which requires Commercial Baking Techniques and one further baking course. Scottsdale Community College offers the district’s Baking and Pastry Arts AAS, which uses the same baking courses, and Maricopa notes that students may need to take courses at more than one college.

  • Is this certificate eligible for a Pell Grant if I enroll in it alone?
