Cochise College Baking and Pastry Certificate

Cochise College teaches baking at its Downtown Center in Sierra Vista, where the Culinary Baking and Pastry Arts Certificate packs six courses into 17 credits. Five of the six are baking or pastry courses, so the program carries no general education and no savory cooking requirement.

Its tuition structure is unusual for out-of-state students. Non-residents pay one rate for 6 credits or fewer and a much higher rate, applied back to the first credit, once they pass 6 credits in a semester. Lab fees on the five kitchen courses also add a large share to the bill for every student.

Baking and Pastry Program Options

The college’s Culinary Arts program page lists four certificates and no associate degree. Only one of the four has baking or pastry in its title.

Culinary Baking and Pastry Arts Certificate

According to the 2026–27 catalog entry, the certificate teaches core classic pastry techniques for entry-level jobs in bakeries, pastry shops, and other food service operations. The catalog classifies it as a 16–30 credit certificate with no program prerequisites. The program page shortens the name to Culinary Baking & Pastry.

The 2026–27 degree map shows a fall semester of 8 credits and a spring semester of 9 credits, all marked campus-based at the Downtown Center. The map assumes that course prerequisites have been met, and it is the only published sequence.

Related Culinary Certificates

Students who want savory training alongside baking can look at the 28-credit Culinary Arts Certificate, which takes three semesters on its degree map. It shares Food Service Sanitation, Principles of Baking, and Intermediate Baking and Pastry Techniques with the baking certificate. The 16-credit Culinary Skills Certificate includes Principles of Baking as well.

Curriculum and Baking Courses

The catalog lists six required courses. Each baking course is 3 credits and combines two lecture hours with two or three lab hours:

  • Food Service Sanitation (2 credits): food safety, hygiene, and safe facilities, with preparation for the ServSafe certification
  • Principles of Baking: baking theory, bakeshop measurements and math, equipment, cookies, basic doughs, and desserts
  • Cake Decorating Principles
  • Intermediate Baking and Pastry Techniques: rich doughs, pastry doughs, custards, and mousses
  • Professional Pastry Techniques: laminated doughs, plated and frozen desserts, and entremets
  • Professional Chocolates and Confections: tempering, truffles, bonbons, ganache, and an introduction to sugar work

Every course must be completed with a grade of C or higher. The catalog also requires at least 25% of the credits to be earned at Cochise College and allows up to 50% to come from prior learning credit.

Tuition and Additional Costs

For 2026–27, Cochise College charges $96 per credit for Arizona residents. The college has one resident rate and no separate in-county rate. Out-of-state students pay $144 per credit when taking 1–6 credits in a semester and $258 per credit when taking more than 6, with the higher rate applied back to the first credit. The published rate schedule shows no general per-credit or per-semester fee. Using the degree map’s two semesters of 8 and 9 credits:

ProgramCreditsEstimated in-state tuition and feesEstimated out-of-state tuition and fees
Culinary Baking and Pastry Arts Certificate (2 semesters)17$1,632$4,386

Each estimate is 17 credits multiplied by the per-credit rate. Both semesters on the degree map exceed 6 credits, so the out-of-state figure uses $258 throughout. The college also lists a Western Undergraduate Exchange rate of $144 per credit and a New Mexico tuition waiver rate of $96 for students who qualify.

Course lab fees, books, clothing, and supplies are not included. The Academic Program Costs page lists 2026–27 lab fees of $225 for Principles of Baking, $225 for Cake Decorating Principles, $250 for Intermediate Baking and Pastry Techniques, $275 for Professional Pastry Techniques, and $300 for the chocolates and confections course. Those five fees total $1,275, which would bring the resident cost to about $2,907. No fee is listed for Food Service Sanitation. The same page says culinary students need black work pants ($20–$50), nonslip closed-toe shoes ($30–$150), and a notebook and pens (about $20). Current rates are on the tuition and fees page.

Admissions and Financial Aid

The program page states that there are no special admissions requirements. Cochise College admits high school graduates, holders of a high school equivalency credential, anyone 18 or older, and transfer students in good standing. Residency documents must be on file before the term starts, or the college charges out-of-state tuition.

Financial aid at Cochise College requires enrollment in an approved degree or certificate program, and most aid starts with the FAFSA. The college does not state on its program or catalog pages whether this 17-credit certificate is approved for federal aid, so ask the Financial Aid Office before counting on a Pell Grant. Federal loans require at least six credits per term.

Career Preparation and Transfer Considerations

The certificate is aimed at entry-level bakery and pastry shop positions. Cochise College is accredited by the Higher Learning Commission. Its pages do not state American Culinary Federation accreditation for the culinary programs.

There is no culinary associate degree to continue into, so the next step at Cochise is another certificate. Three of the six courses also count toward the Culinary Arts Certificate. The catalog marks Food Service Sanitation and Principles of Baking as transferable to Northern Arizona University and the University of Arizona. The other four courses carry only a technical and occupational designation.
