The Culinary Institute of America Baking and Pastry Programs

The Culinary Institute of America (CIA) is a private college that teaches baking and pastry arts at three U.S. campuses: its main campus in Hyde Park, New York; the Greystone campus in St. Helena, California; and a branch campus at Pearl in San Antonio, Texas. All three offer an associate degree in Baking and Pastry Arts, which is a 64-credit Associate in Occupational Studies (AOS) in New York and California and a 67-credit Associate in Applied Science (AAS) in Texas. Hyde Park also offers a 123-credit Bachelor of Professional Studies (BPS) in Baking and Pastry Arts for students who bring at least 30 transfer credits.

Every associate program combines four on-campus semesters with a paid internship semester, and CIA says full-time students can finish in 22 months. The college is accredited by the Middle States Commission on Higher Education, and CIA publishes separate 2026–27 tuition, board, and fee schedules for each campus. CIA also operates in Singapore, outside the United States, which this page does not cover.

Baking and Pastry Program Options

The 2026–2027 CIA catalog lists three credentials from the School of Baking and Pastry Arts: the AOS, the AAS, and the BPS. CIA’s only certificate is in culinary arts, so there is no baking and pastry certificate.

Hyde Park, New York

The Baking and Pastry Arts AOS (NY/CA) requires 64 credits: 50.5 in baking and pastry arts, 4.5 in business management, 3 in culinary science, and 6 in liberal arts. Students need a 2.0 cumulative GPA and ServSafe certification to graduate. The internship semester lasts at least 14 consecutive weeks or 550 hours. Hyde Park is the only campus with an April start for the associate degree.

The Baking and Pastry Arts BPS is a degree completion program for students with at least 30 eligible transfer credits. It totals 123 credits and requires a 2.0 GPA. According to the catalog, full-time students who transfer the minimum 30 credits can finish in 32 months, and up to 60 credits may be awarded for prior coursework, exams, military experience, or life achievement. The degree completion page lists January and April starts and an internship semester that students with significant industry experience may be able to waive.

St. Helena, California (Greystone)

California students earn the same 64-credit AOS as Hyde Park students, and the California campus page states that its associate programs follow the Hyde Park curriculum. The CIA’s tuition page places the associate programs at the St. Helena campus, Greystone, at 2555 Main Street. The same page places the Accelerated Culinary Arts Certificate at the Napa location, CIA at Copia, rather than at Greystone. California admits associate students in September and January.

San Antonio, Texas

The Baking and Pastry Arts AAS (TX) has the same baking, business, and culinary science credits as the AOS but requires 9 liberal arts credits instead of 6, for 67 in all. The catalog says Texas laboratory courses normally run with up to 20 students. The campus holds a Certificate of Authorization from the Texas Higher Education Coordinating Board, and it admits students in September and January.

Curriculum and Baking Courses

The associate degree page shows the same 50.5 credits of baking and pastry requirements at all three campuses. Required courses include:

  • Baking and Pastry Techniques (6 credits), and Baking Ingredients and Equipment Technology
  • Hearth Breads and Rolls, and Specialty Breads
  • Basic and Classical Cakes, Individual and Production Pastries, and Contemporary Cakes and Desserts
  • Confectionery Art and Special Occasion Cakes, and Chocolate and Confectionery Technology and Techniques
  • Advanced Baking Principles, Applied Baking and Pastry Production, and Restaurant and Production Desserts
  • Café Savory Foods Production, Café Operations, Introduction to Service and Beverage, and Beverages and Customer Service
  • Supporting courses in food safety, nutrition, menus and profitability, kitchen math, gastronomy, and college writing

Each campus has a student-run retail café: the Apple Pie Bakery Café in Hyde Park, the Bakery Café by Ghirardelli at Greystone, and a CIA Bakery Café pop-up in San Antonio, as described on CIA’s restaurant learning page.

The BPS repeats much of the associate-level bakeshop sequence (48 credits of baking and pastry requirements), then adds 27 credits of liberal arts, 3 credits of liberal arts electives, 30 free elective credits, and 15 credits of advanced work. That advanced block is either one advanced course such as Advanced Pastry or Advanced Bread Baking plus four applied practice courses, or a concentration with a semester in California, Texas, Singapore, Spain, or New York.

Tuition and Additional Costs

CIA charges a flat full-time semester price for 12–18 credits. Its 2026–27 tuition and fees page, effective July 1, 2026, lists $19,755 in tuition at every campus. Board and general fees differ: New York adds $2,595 board and an $885 general fee ($23,235 per semester), California adds $2,310 board and an $885 general fee ($22,950), and Texas adds $1,090 board and a $485 general fee ($21,330). CIA does not charge tuition in the internship semester, so estimates count on-campus semesters only.

ProgramCampusCreditsEstimated tuition, board, and fees (campus semesters)
Baking and Pastry Arts AOSHyde Park, New York64$92,940 (4 semesters)
Baking and Pastry Arts BPSHyde Park, New York123 (30+ transferred)$139,410 (6 semesters, est.)
Baking and Pastry Arts AOSSt. Helena, California64$91,800 (4 semesters)
Baking and Pastry Arts AASSan Antonio, Texas67$85,320 (4 semesters)

CIA does not publish a semester count for the BPS. The estimate assumes a student who transfers the minimum 30 credits and completes the remaining 93, including the 2.5-credit internship, in six campus semesters, the fewest possible at 18 credits per semester. More transfer credits would mean fewer semesters.

The estimates exclude one-time charges: orientation ($275 in New York, $135 in California, $60 in Texas), first-semester supplies and uniforms ($1,194), and a $300 graduation fee. Adding them brings the associate degrees to $94,709 in New York, $93,429 in California, and $86,874 in Texas. The $50 application fee, health insurance ($2,100 per year, waivable if eligible), housing, and internship-semester living costs are also excluded. Residence halls run $4,135–$5,560 per semester in New York and $4,430–$6,215 in California. Credits below 12 or above 18 are billed at $1,315 each, and BPS concentrations in Singapore or Spain carry a $3,100 international concentration fee. Rates for 2027–28 may differ.

Admissions and Financial Aid

According to the admissions requirements page, applicants submit the CIA application or the Common Application, transcripts, and an essay; a recommendation letter and SAT or ACT scores are optional. BPS applicants must bring at least 30 eligible college credits. Applicants with at least two and a half years of full-time foodservice work may qualify for CIA’s Turbo Option, which can waive the associate internship semester and shorten the degree to as little as 15 months at any of the three campuses.

The CIA’s funding page lists scholarships, grants, loans, work-study, and an on-campus Earn and Learn job program. The accreditation page states that the college is approved for veterans training under the GI Bill.

Career Preparation and Transfer Considerations

The catalog lists baker, pastry chef, caterer, food researcher, and kitchen supervisor among entry-level roles for associate graduates, and executive pastry chef, chocolatier, and bakeshop owner among BPS outcomes. CIA’s pages do not claim separate ACF programmatic accreditation for these programs.

The AOS is an occupational degree, so students planning further study should confirm how its credits transfer before enrolling. Within CIA, the catalog notes that associate graduates who also bring transfer credits from other colleges must complete at least one semester beyond the associate degree to earn the BPS. Only Hyde Park awards the baking and pastry bachelor’s degree.
