Alfred State College Baking and Pastry Programs

Alfred State College offers one baking credential, the Culinary Arts: Baking, Production, and Management A.O.S. It is a 72-credit, four-semester associate degree taught through the School of Applied Technology, with classes on the Wellsville and Alfred campuses and student housing on the Alfred campus.

The program is unusually lab-heavy. The 2026–27 catalog describes 1,350 hours of hands-on production experience, about 80 percent of it in bakery training, and every semester includes a nine-credit production lab. Graduates can also apply to return for one more year and earn a second degree in culinary arts.

Baking and Pastry Program Options

Alfred State’s Culinary Arts Department runs two associate programs: Culinary Arts and the baking-focused A.O.S. profiled here. The program page lists the Wellsville and Alfred campuses as academic locations. The college does not offer a separate baking certificate.

Culinary Arts: Baking, Production, and Management A.O.S.

The catalog program entry covers baking methods, ingredients, measurements, controls, equipment, and merchandising. Production for breakfast, lunch, and dinner is built into a single daily schedule, so students practice in a working food service setting rather than isolated demonstrations.

As an Associate in Occupational Studies, the degree contains no general education courses. All 72 credits are culinary, baking, and hospitality courses. Graduation requires completing the four-semester plan with at least a 2.0 GPA in major courses.

Adding a Culinary Arts Degree

Graduates may apply for readmission to a dual-degree option and complete a second associate degree in culinary arts in one additional year. That route suits bakers who later want savory kitchen training on the same transcript.

Curriculum and Baking Courses

The catalog degree map lists 16 courses. Each semester pairs one nine-credit lab with three-credit lecture courses:

  • Baking Fundamentals lab (9 credits): fried goods, yeast dough, quick breads, pies, cookies, cakes, and icings
  • Baking Preparations lab (9 credits): yeast dough, pastries, specialty cookies, finishing, and decorating
  • Advanced Pastry Preparation lab (9 credits): wedding cakes, tortes, specialty pastries, and bakery management
  • Pastry Capstone (9 credits): plated desserts, chocolate sculpting, sugar work, and candy production
  • Baking Foundations, Baking Techniques and Prep, International Baking and Cooking Fundamentals, and Advanced Pastry
  • Food Safety and Service Training, Fundamentals of Nutrition, and Intro to Food Science and Technology
  • Purchasing and Cost Control, Menu Planning, Beverage and Fermentation, Hospitality Supervision, and Hospitality Management

Food Safety and Service Training ends with the National Restaurant Association Educational Foundation exam. The capstone also covers inventory, ordering, pricing, and bakery merchandising.

Tuition and Additional Costs

Alfred State’s rates, current as of May 1, 2026, match SUNY’s 2026–27 state-operated tuition. Full-time New York residents pay $3,535 per semester ($7,070 a year), and out-of-state associate students pay $6,005 per semester ($12,010 a year). Mandatory comprehensive fees total $911 per semester: activities $125, athletics $267, college $25, educational technology $213.50, student health $135.50, transportation $97.50, transcript $10, and fitness center $37.50. New students also pay a one-time $170 orientation fee.

Each semester in the degree map carries 18 credits, so full-time tuition applies throughout. The estimates cover four semesters of tuition and fees plus the orientation fee:

ProgramCreditsEstimated in-state tuition and feesEstimated out-of-state tuition and fees
Culinary Arts: Baking, Production, and Management A.O.S. (4 semesters)72$17,954$27,834

The totals do not include housing, meal plans, books, the required laptop, or the program costs below. Out-of-state students should ask about Alfred State’s Freeway Scholarships.

The four nine-credit labs each list a $60 course fee in the catalog, or $240 in total. According to the department’s student requirements page, baking students need 10 chef coats, four pairs of chef pants, four hats, and one polo shirt, along with non-skid black shoes, decorating tips, and a silicone baking mat. A mandatory uniform laundry service is projected at $100 per semester on the tuition bill, and all culinary students must buy a five-day meal plan covering one meal a day. Current rates are on the tuition and fees page and the fee explanation page.

Admissions and Financial Aid

Applicants use either the SUNY Application or the Common Application. The program recommends basic math, reading, and writing skills and publishes technical standards, including the ability to lift 50 pounds to counter height and work several hours a day in a crowded, fast-paced lab. A tier 1 laptop is required for entering students.

Through its Free Tuition Plus effort, Alfred State helps eligible New York students combine Pell, TAP, and Excelsior funds to cover SUNY tuition. Fees, housing, and program costs still need other funding, so students should file the FAFSA and review their SUNY financial aid plan.

Career Preparation and Transfer Considerations

The catalog lists baker, pastry chef, caterer, commercial baker, product developer, sales representative, and entrepreneur among occupational options.

Graduates may enter Alfred State’s technology management B.B.A. directly. The catalog estimates two more years for graduates who already have credit for composition, statistics, literature, history, and speech, and about two and a half years for others, because the A.O.S. has no general education.
