Mohawk Valley Community College (MVCC) has campuses in Utica and Rome, and its baking and pastry program is based in Rome. Students can earn the 63-credit Baking & Pastry Arts Management AOS or one of three stackable, credit-bearing microcredentials: Introduction to Baking, Advanced Baking, and Bakeshop Facility Design & Planning.
MVCC builds the degree from these microcredentials. The catalog notes that every microcredential course applies to the AOS, so a student can start with a few baking courses and continue toward the full degree. Details below come from MVCC’s 2026–27 catalog.

Baking and Pastry Program Options
All four credentials appear in the 2026–27 MVCC catalog program list. MVCC also offers a Culinary Arts Management AOS and a Chef Training certificate for students who want broader kitchen training.
Baking & Pastry Arts Management AOS
The Baking & Pastry Arts Management AOS is a 63-credit program laid out over four semesters of 16, 15, 16, and 16 credits. Almost all of it is food service and hospitality coursework: seven baking and bakeshop courses, plus culinary fundamentals, nutrition, purchasing, food marketing, beverage management, supervisory leadership, and a three-credit internship. The program page says students work in full-service kitchens and labs and learn commercial production and bakeshop operations.
Introduction to Baking Microcredential
The Introduction to Baking microcredential is 12 credits: Baking 1, Baking 2, Safety and Sanitation, and Culinary Math. The sanitation course includes a certification exam from the National Restaurant Association’s Educational Foundation. This microcredential is the prerequisite for the other two.
Advanced Baking Microcredential
The nine-credit Advanced Baking microcredential pairs Classical Cakes and Tortes and Advanced Bread Baking with Advanced Bakeshop, which covers hot and cold plated desserts. MVCC says it covers lean and enriched doughs, viennoiserie, chocolate, and sugar work.
Bakeshop Facility Design & Planning Microcredential
The 11-credit Bakeshop Facility Design & Planning microcredential is designed for future bakery owners and managers. It combines Bakeshop Operations 1 and 2, which cover a la carte production, menu costing, and daily specials, with Menu & Facilities Planning.
Curriculum and Baking Courses
The AOS includes the following baking and bakeshop courses, listed in the order the catalog schedules them:
- Baking 1: cakes, cookies, muffins, sweet rolls, and breads (4 credits)
- Baking 2: Danish, puff pastry, sponge dough, tarts, and choux (4 credits)
- Advanced Bread Baking: artisan, whole grain, rye, sourdough, and laminated breads (3 credits)
- Classical Cakes and Tortes (3 credits)
- Bakeshop Operations 1 and 2 (4 credits each)
- Advanced Bakeshop: hot and cold plated desserts (3 credits)
- Supporting courses: Culinary Fundamentals 1, Safety and Sanitation, Culinary Math, Culinary Nutrition, Dining Room Service, and Menu & Facilities Planning
Prerequisites set the order. Baking 2, Advanced Bread Baking, and Classical Cakes and Tortes follow Baking 1. Advanced Bakeshop follows Baking 2, and Bakeshop Operations 2 follows Operations 1.
Tuition and Additional Costs
MVCC’s 2026–27 schedule charges New York residents with a Certificate of Residence (Oneida County residents are exempt from filing one) $2,740 per full-time semester or $228 per credit part time. Out-of-state students, and New York residents without a certificate, pay $4,110 per semester or $342 per credit. Full-time students pay $515 per semester in fees: a $295 technology fee, a $145 activity fee, and a $75 student support fee. Part-time students pay $30 per credit for technology. Their activity fee is $145 per semester at 5.5 or more credits, or $27 per credit below that. Matriculated part-time students add a $45 support fee.
| Program | Credits | Estimated in-state tuition and fees | Estimated out-of-state tuition and fees |
|---|---|---|---|
| Baking & Pastry Arts Management AOS (4 full-time semesters) | 63 | $13,020 | $18,500 |
| Introduction to Baking Microcredential (2 semesters assumed: 8 + 4 credits) | 12 | $3,349 | $4,717 |
| Advanced Baking Microcredential (1 semester assumed) | 9 | $2,467 | $3,493 |
| Bakeshop Facility Design & Planning Microcredential (2 semesters assumed: 7 + 4 credits) | 11 | $3,091 | $4,345 |
MVCC does not publish a length for the microcredentials. Two semesters are assumed where a prerequisite requires it (Baking 1 before Baking 2, and Bakeshop Operations 1 before 2), and one semester for Advanced Baking. Microcredential students apply as non-matriculated students, so the estimates leave out the support fee. The estimates also exclude books, uniforms, and living costs.
AOS students should also budget for the $408 culinary fee for Culinary Fundamentals 1. MVCC also lists an Academic Advantage Pack book bundle at $27 per credit. Lab courses require a full chef’s uniform with slip-resistant leather shoes.
Admissions and Financial Aid
MVCC is an open-admission SUNY college, and applying is free. Students seeking the AOS file a matriculated application, which is also required for financial aid. The catalog recommends an interview with admissions. Students who want only a microcredential apply as non-matriculated students, and MVCC notes that this route is generally not eligible for federal financial aid.
MVCC says microcredential students may qualify for New York State Part-Time Tuition Assistance for Non-Degree Credentials. New York residents from outside Oneida County must file a Certificate of Residence from their home county every year to receive the resident rate.
Career Preparation and Transfer Considerations
MVCC lists baker, bakery assistant, pastry chef, bakery production manager, and cake decorator as possible roles with experience and further training. The AOS program goals cover production to industry standards, baking math and ingredient function, food safety, and the presentation of finished desserts and baked goods.
The AOS is a career degree, but MVCC reports that graduates have transferred to Niagara University, SUNY Cobleskill, and SUNY Morrisville. Transfer students should ask the receiving school how the AOS credits would apply.
