Fox Valley Technical College in Appleton offers two baking credentials that share one core: the 27-credit Baking & Pastry Production technical diploma and the 60-credit Baking & Pastry Management associate degree. Every course in the diploma also appears in the degree, so students can start with the shorter program and keep building.
Both programs run through the college’s Culinary, Baking & Hospitality area. That area recently finished a $9.9 million renovation of its culinary and hospitality learning labs, completed in 2026. Students can attend part time or full time, and both credentials are listed as financial aid eligible.

Baking and Pastry Program Options
FVTC groups its baking, culinary, and hospitality programs together on the Culinary, Baking & Hospitality programs page. Each program page links to a course list with credits, instructional hours, and course descriptions, and the details below come from those current pages.
Baking & Pastry Management Associate Degree
The Baking & Pastry Management degree totals 60 credits. According to its course list, 45 are technical studies and 15 are general studies: written communication, oral and interpersonal communication, business math, diversity studies, and psychology.
First-year courses focus on breads, pastries, pies, tarts, cakes, and confections. The second year adds plated desserts, chocolate, healthy and natural baking, and a second retail operations course that covers scheduling, costing, pricing, and inventory. Supporting courses include hospitality supervision, cost controls, catering, and hospitality sales. A 1-credit Baking Industry Experience places students with a mentor in the workforce.
Baking & Pastry Production Technical Diploma
The Baking & Pastry Production diploma requires 27 occupational credits and no general education. Its course list covers breads, pastries, pies, cake production and decorating, confections, and the first student-run retail operations course.
All 15 diploma courses are also required in the associate degree. A diploma graduate who continues would still need the ten additional technical courses and 15 general studies credits.
Curriculum and Baking Courses
Across the two credentials, FVTC’s baking and pastry coursework includes:
- Baking Essentials, Science of Baking, Baking Basics, and Baking Techniques
- Artisan Breads and Rolls, including sour starters, bagels, and gluten-free breads
- Cake Production, Advanced Cake Decorating 1, and Advanced Cake Decorating 2 (degree)
- Pastries, Confections, and Chocolate (degree)
- Plated Desserts and Healthy and Natural Baking (degree)
- Baking and Pastry Operations 1 and 2 (the second in the degree only)
- Introduction to Food Production, Sanitation for Food Service Operations, and Nutrition for Culinary Arts
The operations courses stand out. Students staff a student-run retail space, handling front- and back-of-house production and customer service. In the degree’s second operations course, they take on management tasks such as production scheduling and order control. Most baking courses are 1 or 2 credits, so students take several short, focused labs rather than a few long ones.
Tuition and Additional Costs
FVTC’s 2026–27 tuition and fees page lists $157.45 per credit for Wisconsin residents and $236.18 per credit at the out-of-state rate. Other charges are a $14.20 per-credit student activity fee, a $6.00 standard material fee per course, and $4.50 per semester for student accident insurance. Program length is not published, so these estimates assume two semesters for the diploma and four for the degree:
| Program | Credits | Estimated in-state tuition and fees | Estimated out-of-state tuition and fees |
|---|---|---|---|
| Baking & Pastry Production Technical Diploma (2 semesters, 15 courses) | 27 | $4,734 | $6,859 |
| Baking & Pastry Management Associate Degree (4 semesters, 30 courses) | 60 | $10,497 | $15,221 |
These figures leave out the $30 application fee, course-specific material fees beyond the $6 standard fee, textbooks, uniforms, and living costs. FVTC notes that some courses carry additional material fees. Its own program estimates are higher than the table: $6,100 in tuition and fees for the diploma and $12,600 for the degree.
The program pages also estimate $370 in additional materials and supplies for either credential. Textbooks are estimated at $1,510 for the diploma and $1,795 for the degree. The college’s cost of attendance guide shows living and transportation budgets.
Admissions and Financial Aid
Both programs require an academic skills assessment unless the applicant qualifies for a waiver. The listed alternatives are a high school GPA of 2.75 or higher, a completed associate or higher degree, a score of 165 or higher on the 2014-series GED tests, or qualifying ACT or Accuplacer results. The Accuplacer costs $15. Applicants apply through FVTC’s admissions page, and each program page shows which upcoming terms are open.
FVTC marks both the diploma and the degree as financial aid eligible, so students should file the FAFSA. Payment plans are available for balances of $300 or more, with a $30 enrollment fee per term.
Career Preparation and Transfer Considerations
For the diploma, FVTC lists roles such as baker, bakery clerk, cake decorator, dough mixer, scaler, and pastry chef. Degree careers lean toward supervision, with bakery manager, catering manager, and food retail manager on the list. The degree’s outcomes add financial analysis and supervision skills to baking and sanitation.
FVTC is accredited by the Higher Learning Commission and has credit transfer agreements with other two- and four-year colleges. The associate degree is an applied program, so students planning a bachelor’s degree should confirm with the receiving school how its technical and general studies credits would count.
