Chippewa Valley Technical College in Eau Claire offers one baking credential: the Baking & Pastry Specialist technical diploma (program 30-314-4). The 24-credit program runs for one year, face-to-face, with a single August start. Students spend the fall semester on baking fundamentals and core culinary labs, then move into advanced production and bakery business courses in the spring.
Every course in the diploma also appears in CVTC’s 60-credit Culinary Management associate degree, which gives graduates a direct route to a two-year credential. Course and credit details below come from the 2026–27 CVTC academic catalog and the program requirements page effective August 2026.

Baking and Pastry Program Options
CVTC groups its food programs in the Culinary & Food Services career cluster. The Baking & Pastry Specialist program page is the only baking-titled credential in that cluster; the Culinary Management associate degree is the related longer option.
Baking & Pastry Specialist Technical Diploma
According to the program requirements, the diploma is laid out as a 15-credit first semester and a 9-credit second semester. The catalog describes it as preparation for food-service work in restaurants, bakeries, catering services, delis, hotels, resorts, healthcare facilities, and schools, with added training in managing a bakery department.
Timing matters here. Intro to Baking & Pastry is offered in fall only, and Advanced Baking and Pastry and the three business courses are spring only. Students who miss the August start would generally wait a year to begin the baking sequence.
Continuing Into Culinary Management
The Culinary Management associate degree (10-316-1) requires 60 credits over two years and includes all eight Baking & Pastry Specialist courses, plus advanced culinary arts, garde manger, restaurant and event operations, an internship, and general education. CVTC states that this degree is accredited by the American Culinary Federation Education Foundation. The college does not make that statement for the baking diploma itself.
Curriculum and Baking Courses
The 2026–27 catalog lists eight required courses:
- Intro to Baking & Pastry (5 credits, fall only)
- Food Theory (3 credits)
- Intro to Culinary Arts (5 credits)
- Food Safety & Sanitation (2 credits)
- Advanced Baking and Pastry (5 credits, spring only)
- Service Management (2 credits)
- Purchasing & Cost Control (1 credit)
- Menu Design & Development (1 credit)
The introductory course covers bakeshop tools, ingredient functions, and techniques such as creaming, foaming, lamination, straight dough, custards, frozen desserts, and chocolates, with products presented through retail production. The advanced course adds artisan breads, cakes, plated desserts, and confections, taught through café and restaurant production and ending in a capstone dessert showcase. Students who hold an active ServSafe Food Safety certification can ask about credit for prior learning for Food Safety & Sanitation.
Tuition and Additional Costs
For 2026–27, CVTC’s tuition and fees page lists $157.45 per credit for Wisconsin and Minnesota residents and $236.18 per credit for other out-of-state students. Mandatory fees are an activity fee of 5.5% of the per-credit tuition rate, an academic support fee of 2.5%, a $1.25 per-credit health services fee, and a public safety fee of $6 per credit up to $90. The estimate below applies the percentage fees to each tuition rate and the $90 cap to the 15-credit first semester:
| Program | Credits | Estimated in-state tuition and fees | Estimated out-of-state tuition and fees |
|---|---|---|---|
| Baking & Pastry Specialist technical diploma (2 semesters) | 24 | $4,255 | $6,296 |
These figures leave out course material fees, books, the tool kit and uniform, the $30 application processing fee, housing, and transportation. Minnesota residents pay the Wisconsin rate through reciprocity.
CVTC’s own estimate, which includes those class fees, is higher: $3,416 for term one, $1,954 for term two, $939 for materials, and $552 for books, for a total of about $6,861. The program’s advising tips put the tool kit and uniform at approximately $1,000. That cost is built into the Intro to Culinary Arts course fees and is eligible for financial aid.
Admissions and Financial Aid
The admission checklist asks applicants to submit the online application, pay the one-time $30 processing fee, and meet the education requirement of a high school diploma or equivalent. Applicants without one can contact CVTC’s Adult Education and College Prep office about other ways to show college readiness. Once these steps are done, students are considered for enrollment based on openings in the program. Anyone with earlier college credit should have official transcripts sent for evaluation.
CVTC lists the diploma as financial aid eligible. To keep aid, students must maintain a 2.0 term and cumulative GPA, complete 67% of attempted credits each semester, and finish within 150% of the published credits. Only courses that are part of the student’s program count.
Career Preparation and Transfer Considerations
CVTC names line cook, baker, bakery clerk, and cake decorator as career options, and lists SentryWorld, Festival Foods, Kwik Trip, and Costco among graduate employers. Its graduate follow-up survey reports that 100% of recent program graduates found jobs in the industry. The $37,420 average starting salary shown on the program page comes from regional labor market data rather than CVTC graduates.
The clearest next step is the Culinary Management associate degree, since the full diploma already fits inside it. CVTC also maintains transfer agreements with other institutions, but a technical diploma is built for employment, so students hoping to use these credits toward a bachelor’s degree should ask the receiving school early.
