Lakes Region Community College Baking and Pastry Programs

Lakes Region Community College offers two focused Pastry Arts pathways at its Laconia campus: a 61-credit associate degree and a 28-credit certificate. Both programs combine applied baking instruction with experience in a student-operated pastry kitchen.

The associate degree adds management, nutrition, general education, advanced pastry work, and a capstone. The certificate provides a shorter route through the core technical courses and cooperative education.

Pastry Arts Program Options

LRCC’s Pastry Arts program prepares students for entry-level through beginning supervisory work in bakeries, pastry shops, hotels, restaurants, and retail food operations.

Pastry Arts Associate Degree

The 61-credit associate pathway provides the broadest preparation. Students study breads and rolls, bakery production, plated desserts, cake decorating, baking technologies, advanced pastries and confections, and nutritional and alternative baking.

The degree also includes cost control, restaurant facility and menu design, business communication, general education, cooperative education, and a Pastry Arts capstone. Most full-time students should plan for about two academic years plus the summer cooperative course.

Pastry Arts Certificate

The 28-credit certificate concentrates on the technical baking sequence. Required courses include Breads and Rolls, Bakery Production, Cake Decorating, Sanitation and Safety, Hot and Cold Plated Desserts, Baking and Pastry Technologies, Advanced Cake Decorating, Advanced Pastry and Confections, and Pastry Arts Cooperative Education.

This option may fit students who want job-focused pastry training without the general education and management requirements of the associate degree.

Hands-On Training

Students practice in a student-operated pastry kitchen and complete workplace learning through cooperative education. LRCC also encourages summer employment in pastry arts so students can apply classroom skills in a professional setting.

Program outcomes cover production planning, purchasing, pricing, food cost, equipment use, teamwork, pastry kitchen operations, hospitality law, nutritional baking, and advanced pastry methods.

Tuition and Estimated Program Cost

LRCC lists in-state tuition at $238 per credit. Multiplying that rate by the required credits produces the following base-tuition estimates:

ProgramCreditsEstimated in-state base tuition
Pastry Arts Associate Degree61About $14,518
Pastry Arts Certificate28About $6,664

These figures cover tuition only. Students should also budget for comprehensive and laboratory fees, textbooks, baking tools, uniforms, ingredients, transportation, and living expenses. Rates can change, so review the college’s current tuition and fees before enrolling.

Admissions and Financial Aid

Prospective students can begin through the LRCC application page. Applicants should confirm placement requirements, course sequencing, and the next available start term with admissions or the Pastry Arts department.

Federal and state financial aid may be available to eligible students in qualifying programs. LRCC recommends completing the FAFSA and reviewing its scholarship and grant options early.

Career Preparation

Graduates may pursue work as bakers, pastry cooks, cake decorators, production bakers, or pastry kitchen supervisors. The associate degree provides added preparation for costing, purchasing, planning, and small-shop management.
