Asheville-Buncombe Technical Community College (A-B Tech) offers two 18-credit baking certificates through its Culinary Arts and Hospitality department: the Baking and Pastry Certificate and the Therapeutic Baking Certificate. Both are taught on the Asheville campus, where the culinary program uses a 39,000-square-foot building and a renovated 1870s house with five kitchens, five dining rooms, and a demonstration hall.
The two certificates share five core courses in sanitation, food science, bread, and baking. They differ in one course: the standard certificate adds petit fours and individual pastries, while the therapeutic version covers baking for gluten-free, lactose-free, vegan, keto, and other special diets. The college states that its Baking and Pastry Arts program is accredited by the American Culinary Federation. Details below come from A-B Tech’s 2026–27 program pages.

Baking and Pastry Program Options
Both certificates appear on A-B Tech’s Culinary Arts and Hospitality overview, alongside the 71-credit Culinary Arts A.A.S. and several short culinary and hospitality certificates. The college does not currently list a baking diploma or a baking associate degree.
Baking and Pastry Certificate
The Baking and Pastry Certificate builds a base of baking techniques with emphasis on food safety, production baking, breads, and pastries. Its seven courses total 18 credits, and students need a C or better in every BPA and CUL course.
Petit Fours and Pastries is the course unique to this certificate. It covers traditional and contemporary petit fours and plated individual pastries for buffets and special events.
Therapeutic Baking Certificate
The Therapeutic Baking Certificate also requires 18 credits and, according to the college, can be completed in three semesters. A-B Tech describes it as preparation for restaurant and healthcare food service settings.
In place of Petit Fours and Pastries, students take Therapeutic Baking, a three-credit course on gluten-free, lactose-free, vegan, keto, low-fat, low-carb, and reduced-calorie pastries and breads. It requires sanitation, Baking I, and either Baking II or Artisan and Specialty Bread first.
Curriculum and Baking Courses
The 2026–27 requirements for the two certificates include:
- Sanitation and Safety (2 credits), both certificates
- Food Science (2 credits), both certificates
- Baking I (3 credits) and Baking I Lab (1 credit), both certificates
- Baking II (3 credits): classical and frozen desserts, cakes and tortes, decorating, and plating
- Artisan and Specialty Bread (4 credits): naturally leavened loaves, hearth breads, focaccia, and flatbreads
- Petit Fours and Pastries (3 credits), Baking and Pastry Certificate only
- Therapeutic Baking (3 credits), Therapeutic Baking Certificate only
Students who hold a ServSafe Manager certification receive credit for Sanitation and Safety. Because 15 of the 18 credits overlap, a student who finishes one certificate would need only one more course for the other, subject to advising.
Tuition and Additional Costs
For 2026–27, A-B Tech charges $76 per credit for North Carolina residents and $268 per credit for out-of-state students, capped at $1,216 and $4,288 for 16 or more credits in a semester. Per-semester fees on the tuition and fees page are a $48 technology fee, a $30 CAPS fee, a $25 matriculation fee, a $2 insurance fee, and a $45 activity fee charged in fall and spring, for $150 per semester.
| Program | Credits | Estimated in-state tuition and fees | Estimated out-of-state tuition and fees |
|---|---|---|---|
| Baking and Pastry Certificate (2 semesters, assumed) | 18 | $1,668 | $5,124 |
| Therapeutic Baking Certificate (3 semesters) | 18 | $1,818 | $5,274 |
A-B Tech does not publish a length for the Baking and Pastry Certificate, so its estimate assumes two semesters. The Therapeutic Baking estimate uses the published three semesters; if one of them is a summer term, the activity fee would not apply and the total would be $45 lower. Neither figure includes textbooks, uniforms, tools, or living costs.
The college notes that some courses carry consumable fees, which appear on the registration statement. Its 2026–27 cost of attendance schedule also lists a $1,500 culinary major fee among program costs used for financial aid budgeting, so students should ask what that covers for the baking certificates.
Admissions and Financial Aid
A-B Tech has an open-door admissions policy, and a high school diploma or equivalent is normally required. The Become an A-B Tech Student checklist covers applying, completing residency determination, submitting transcripts, placement, orientation, and advising before registration.
Pell Grants and the NC Scholarship require enrollment in an eligible program, and the state grant also requires at least six credits per semester. A-B Tech does not state on the certificate pages whether these baking certificates are aid-eligible, so applicants should confirm with the Financial Aid Office. The A-B Tech Foundation also lists a Baking and Pastry Arts scholarship category.
Career Preparation and Transfer Considerations
A-B Tech lists pastry or baking assistant, assistant pastry chef, cake decorator, and baker as career outcomes, with restaurants, hotels, resorts, caterers, independent bakeries, and high-volume bakeries as settings. The college says American Culinary Federation certification is available to graduates. Culinary students also run lunches and dinners in the Magnolia and Fernihurst dining rooms on most fall and spring Thursdays.
These certificates are not designed for university transfer. Students who want a degree can look at the Culinary Arts A.A.S., which also requires Sanitation and Safety, Food Science, Baking I, and Baking II. An advisor can confirm how certificate credits would apply.
Which A-B Tech Pathway May Fit You?
| Pathway | May fit students who want |
|---|---|
| Baking and Pastry Certificate | A short, ACF-accredited program covering breads, cakes, plated desserts, and petit fours for bakeshop or pastry kitchen work |
| Therapeutic Baking Certificate | The same baking core plus training in allergen-aware and special-diet baking for restaurant or healthcare food service |
| Culinary Arts A.A.S. | A full culinary degree that includes Baking I and Baking II, for students who later want broader kitchen training |
