Wilson Community College Baking and Pastry Programs

Wilson Community College offers a 14-credit Baking and Pastry Certificate (C55150A) through its Culinary Arts program in Wilson. Unlike many short baking certificates, all five courses are food production courses, with no menu, cost control, or general education requirements mixed in.

The certificate builds from sanitation and two levels of baking into European cakes and tortes and hot and cold desserts. Classes and the culinary lab are in Building K on the main campus at 902 Herring Avenue, and all five courses also appear in Wilson’s Culinary Arts associate degree.

Baking and Pastry Program Options

Wilson’s Culinary Arts program page lists two credentials: the Culinary Arts associate degree and the Baking and Pastry Certificate. Requirements for both are in the 2026–2027 catalog.

Baking and Pastry Certificate (C55150A)

The catalog says the certificate prepares students to work as a pastry chef in restaurants, hotels, baking and pastry shops, and retail markets. Of its 14 credits, 12 are lab-based baking and pastry courses, each meeting one class hour and four lab hours per week. The remaining 2 credits cover sanitation and safety.

Wilson does not publish a separate semester plan for the certificate. In the associate degree, the same courses run across three terms: Sanitation and Baking I in fall, Baking II and Hot and Cold Desserts in spring, and European Cakes and Tortes in summer.

Continuing Into the Culinary Arts Degree

The Culinary Arts associate degree (A55150) totals 73 or 74 credits over five semesters. It adds culinary skills labs, garde manger, global, contemporary, and catering cuisine, purchasing, nutrition, general education, and two work-based learning courses. Since the degree already includes every certificate course, students can finish the certificate on the way to the degree.

Curriculum and Baking Courses

The certificate requires these five courses:

  • CUL 110 Sanitation and Safety (2 credits)
  • CUL 160 Baking I (3 credits): ingredients, scaling, yeast and chemically leavened products, laminated doughs, pies, tarts, custards, cakes, and cookies
  • CUL 260 Baking II (3 credits): classical and frozen desserts, cake and torte production, decorating, and plating
  • BPA 130 European Cakes and Tortes (3 credits): classical and modern cakes such as Bavarian, Dobos, and Sacher
  • BPA 165 Hot and Cold Desserts (3 credits): frozen desserts, soufflés, strudel, crepes, and plated desserts

Baking I is taken with or after Sanitation and Safety. Baking II and both BPA courses require Sanitation and Safety and Baking I, so the first term sets the pace for the rest of the certificate.

Tuition and Additional Costs

For 2026–27, Wilson charges $76 per credit for North Carolina residents and $268 per credit for out-of-state students, with tuition capped at 16 credits per semester. Mandatory fees are $2.18 per credit for student activities and accident insurance (maximum $35 per semester), a $25 security and parking fee, and a $20 technology fee each semester. The estimate uses the three-term order from the degree plan, with 5, 6, and 3 credits:

ProgramCreditsEstimated in-state tuition and feesEstimated out-of-state tuition and fees
Baking and Pastry Certificate (3 terms)14$1,230$3,918

Completing the courses in two semesters would save one round of flat fees, or $45. The estimate excludes the $25 graduation application fee, textbooks, supplies, uniforms, and transportation.

Wilson does not list a culinary uniform, knife kit, or baking lab fee in its fee schedule. For budgeting, its cost of attendance estimate includes $2,500 a year for books, materials, supplies, and equipment across all programs. Current charges are on the tuition and fees page.

Admissions and Financial Aid

A high school diploma or equivalent is required for all curriculum certificates. The admission steps are residency determination through the state service, the college application through Wilson or CFNC, official transcripts, and the EdReady placement test for applicants who do not qualify for an exemption.

Aid is the main limitation. The catalog states that certificate-seeking students are not eligible for Pell Grants, with Basic Law Enforcement Training as the only exception. Students who need federal grant aid may want to enroll in the Culinary Arts degree and take the baking courses within it. High school juniors and seniors can also start through a tuition-free Career and College Promise pathway for this program.

Career Preparation and Transfer Considerations

The certificate’s stated focus is pastry work in restaurants, hotels, bakeries, and retail markets. For the degree, Wilson says American Culinary Federation certification may be available to graduates. It does not describe the program as ACF-accredited.

Degree students also complete two work-based learning courses, which the certificate does not include. Graduates who want kitchen experience beyond the pastry labs should compare the extra time and cost of the degree with the training they would gain.
