Somerset Community College Baking and Pastry Programs

Somerset Community College offers two short baking credentials through its Culinary Arts program: a 12-credit Baking Certificate and a 16-credit Professional Baking and Pastry Arts Certificate. The two share the same first 12 credits. The longer certificate adds one course in confections, sugar work, and cake decorating.

According to the college, culinary students train in the program’s facilities on the Somerset campus at 808 Monticello Street, and also work in other commercial kitchens and dining rooms during their studies. Both certificates are KCTCS credentials that Somerset is listed as offering in the 2026–27 KCTCS catalog, which is the source for the course and credit details below.

Baking and Pastry Program Options

Somerset’s Culinary Arts program page lists both baking certificates alongside nine other culinary certificates, three diplomas, and three associate degrees. Neither baking certificate includes general education courses.

Professional Baking and Pastry Arts Certificate

The Professional Baking and Pastry Arts Certificate requires 16 credits in five courses. KCTCS lists only three colleges that offer it: Somerset, Hazard, and West Kentucky. Beyond the shared baking core, students take Professional Confection and Pastry Arts, the only course in either certificate devoted to finishing techniques, sugar work, and cake decorating.

Baking Certificate

The 12-credit Baking Certificate is the smaller of the two options. It covers an introduction to culinary arts, sanitation, Basic Baking, and Advanced Baking and Pastry Arts. Every one of its courses also counts toward the professional certificate, so a student who finishes it needs only one more four-credit course to complete the 16-credit credential.

Continuing Into Culinary Arts

Basic Baking and Advanced Baking and Pastry Arts also appear in the first two semesters of the 66-credit Culinary Arts AAS sequence that Somerset publishes. The college says full-time students can finish the degree in two years. Somerset also offers a 16-credit Fundamentals of Culinary Arts Certificate that includes Basic Baking along with food production and garde manger.

Curriculum and Baking Courses

The KCTCS course descriptions list these requirements for the two certificates:

  • Introduction to Culinary Arts or Applied Introduction to Culinary Arts (2 credits); Somerset’s program page lists the applied, lab-based version
  • Sanitation and Safety (2 credits), covering food service health principles and personal hygiene
  • Basic Baking (4 credits): baking science, cookies, yeast doughs, chemically leavened products, pies, and tarts
  • Advanced Baking and Pastry Arts (4 credits): choux paste, frozen desserts, creams, and custards
  • Professional Confection and Pastry Arts (4 credits, professional certificate only): finishing, sugar work, and cake decorating

Each four-credit baking course combines 30 lecture hours with 60 lab hours. Both advanced courses require Basic Baking first, so plan on more than one term even though the credit totals are small. Students must earn a C or better in each technical course and keep a 2.0 cumulative GPA to progress.

Tuition and Additional Costs

For 2026–27, Somerset’s tuition and charges page lists $198 per credit for Kentucky residents and $270 per credit for nonresidents. All students also pay the $8 per credit KCTCS BuildSmart Investment mandatory fee. The current KCTCS schedule does not list a separate rate for contiguous counties or states, and it shows no flat per-term fee. Because every charge is per credit, the estimates below don’t depend on how many terms a student takes:

ProgramCreditsEstimated in-state tuition and feesEstimated out-of-state tuition and fees
Professional Baking and Pastry Arts Certificate16$3,296$4,448
Baking Certificate12$2,472$3,336

These figures cover tuition and the mandatory fee only. They leave out textbooks, uniforms, knives and other tools, transportation, and living costs. Online-only courses carry an extra $20 per credit distance learner fee, but the baking labs are held on campus.

Neither the college nor the KCTCS catalog publishes program-specific culinary charges such as a uniform, knife kit, or lab fee. Ask the program coordinator what baking students need to buy. The full KCTCS tuition and charges schedule lists other system-wide fees.

Admissions and Financial Aid

Somerset’s path to enrollment starts with choosing a program and completing the KCTCS application. Next come high school and any college transcripts, placement through ACT, SAT, or EdReady, a FAFSA, scholarship applications, and a meeting with an advisor before orientation.

The college’s applying for aid page recommends filing the FAFSA soon after October 1. Somerset doesn’t say whether either baking certificate qualifies for Pell Grants, so students who plan to use federal aid should ask the financial aid office before they enroll.

Career Preparation and Transfer Considerations

KCTCS describes the Culinary Arts program as preparation for professional chef, catering, restaurant, and institutional food service careers. It also says the program uses American Culinary Federation teaching philosophy and ACF competencies. Neither Somerset nor KCTCS states that the baking certificates hold ACF accreditation.

For most students, the practical next step is moving certificate credits into a Culinary Arts diploma or AAS at Somerset rather than transferring them elsewhere. Anyone considering another KCTCS college should confirm how CUL course credits would be accepted there.
