Elizabethtown Community and Technical College Baking Programs

Elizabethtown Community and Technical College has one of the broadest culinary menus in the KCTCS system, with three associate degree tracks, three diplomas, and ten certificates. One of those certificates is devoted to baking: a 12-credit Baking Certificate that combines two baking labs with short courses in culinary foundations and sanitation.

ECTC sets one requirement that many short programs don’t: the college says students must obtain the ServSafe Food Manager Certificate to graduate. For a baking student, that means leaving with a food safety manager credential that employers often ask for, in addition to the college certificate.

Baking and Pastry Program Options

ECTC’s Culinary Arts program page lists the Baking Certificate alongside certificates in catering, food and beverage management, farm to table, and culinary professional development. The college does not offer the 16-credit KCTCS Professional Baking and Pastry Arts Certificate, so the Baking Certificate is its only pastry-focused credential.

Baking Certificate

The 2026–27 KCTCS catalog lists the Baking Certificate at 12 credits with no general education component. Two-thirds of the credits come from Basic Baking and Advanced Baking and Pastry Arts. The rest cover an introduction to the culinary field and a sanitation course, which lines up with the ServSafe manager credential ECTC requires.

Continuing Into Culinary Arts

ECTC offers all three tracks of the Culinary Arts AAS. The Culinary Arts track runs 60–65 credits and includes both baking courses from the certificate, plus International and Classical Cuisine and a practicum or co-op. ECTC says a full-time student can finish the AAS in two years. The college also lists partner university transfer pathways for students thinking beyond an associate degree.

Curriculum and Baking Courses

The KCTCS course descriptions outline four required courses:

  • Introduction to Culinary Arts, or the lab-based Applied Introduction to Culinary Arts (2 credits)
  • Sanitation and Safety (2 credits), on hygiene and food handling practices that protect consumers
  • Basic Baking (4 credits), covering the science of baking, cookies, yeast breads, quick doughs, pies, and tarts
  • Advanced Baking and Pastry Arts (4 credits), covering choux paste, frozen desserts, creams, custards, and nutrition in baked goods

Both baking courses run 30 lecture hours and 60 lab hours. Because the advanced course requires Basic Baking, most students should expect the certificate to take more than one term. KCTCS requires a C or better in each CUL course to progress in the program.

Tuition and Additional Costs

ECTC’s 2026–27 tuition and charges are $198 per credit for Kentucky residents and $270 per credit for nonresidents. Every student also pays the $8 per credit KCTCS BuildSmart Investment for Kentucky Competitiveness fee. ECTC lists no contiguous-state rate and no flat per-term fee, so the estimate below depends only on credits:

ProgramCreditsEstimated in-state tuition and feesEstimated out-of-state tuition and fees
Baking Certificate12$2,472$3,336

The figures include tuition and the mandatory fee only. They exclude the cost of the ServSafe manager exam, textbooks, chef uniforms, knives, transportation, and housing. Online-only classes carry an added $20 per credit fee, which shouldn’t affect the lab-based baking courses.

Neither ECTC nor KCTCS publishes a culinary kit, uniform, or lab fee for this certificate, and the college doesn’t list a price for the required ServSafe credential. The KCTCS tuition and charges schedule covers other system-wide charges.

Admissions and Financial Aid

ECTC’s steps for first-time students are short: file the free application, which the college says takes about 15 minutes; send a final high school or GED transcript; submit ACT or SAT scores or placement results; and look into financial aid. The Welcome and Admissions Center is in Room 101 of the Regional Postsecondary Center on the Elizabethtown campus.

ECTC doesn’t say whether this 12-credit certificate is eligible for Pell Grants. File the FAFSA and confirm aid eligibility with the financial aid office before enrolling in the certificate alone.

Career Preparation and Transfer Considerations

KCTCS says the Culinary Arts program prepares students for work as professional chefs and in restaurant, catering, and institutional food service settings, using American Culinary Federation competencies. ECTC adds that employers may require either the ServSafe Food Manager Certificate or a Person in Charge credential from the local health department. No ACF accreditation is claimed for the program.

Since the certificate’s courses are part of the AAS Culinary Arts track, a graduate can keep going at ECTC without repeating baking coursework. Students interested in a bachelor’s degree should look at ECTC’s university transfer pathways early, because an applied associate degree doesn’t always transfer in full.
