Sinclair Community College in downtown Dayton offers five for-credit baking and pastry credentials, ranging from the 13-credit Basic Baking and Fundamentals short-term certificate to the 65-credit Hospitality Management and Tourism/Bakery and Pastry Arts A.A.S. Every option shares the same starting block of Kitchen Chemistry, Sanitation and Safety, an introduction to hospitality, and a combined Baking I, II, and Barista Basics lab.
Sinclair’s A.A.S. is built around a capstone in which students spend 15 weeks preparing an upscale bakery case that is judged by faculty and industry professionals. The degree also requires a co-op, which means working at a baking or pastry job site. Details below come from the 2026–27 Sinclair catalog, the college’s 2026–27 sample pathways, and its Fall 2026 tuition schedule.

Baking and Pastry Program Options
The four certificates are embedded in the A.A.S., and Sinclair awards embedded certificates automatically as students complete their requirements. The short-term certificates also nest inside one another.
Hospitality Management and Tourism/Bakery and Pastry Arts A.A.S.
The Bakery and Pastry Arts A.A.S. requires 65 credits. It adds cake production, Advanced Pastry Skills, purchasing, marketing, risk management, accounting, nutrition, software applications, and general education to the core baking labs. The full-time sample pathway runs fall, spring, summer, fall, and spring, finishing with the capstone and a 2-credit co-op that requires at least 20 work hours per week.
Bakery Operations and Pastry Skills Certificate
The 35-credit Bakery Operations and Pastry Skills Certificate covers bread making, pastry, and confections such as chocolate work and isomalt sugar sculpture. It also includes supervision, cost control, culinary math, English composition, and a communication course. Sinclair calls it a one-year certificate, and its full-time pathway spans three semesters.
Pastry Specialist and Bakery Specialist STCs
The 19-credit Bakery Specialist short-term certificate adds Pastry and Confectionary and Cake Production and Cake Decoration to the starting block. The 22-credit Pastry Specialist takes the same courses plus Advanced Pastry Skills. Both have two-semester part-time sample pathways.
Basic Baking and Fundamentals STC
At 13 credits, Basic Baking and Fundamentals is the shortest option. It pairs the starting block with Food Service Equipment, Design and Maintenance, and it points graduates toward bakeries, pretzel shops, tortilla manufacturing, and self-employment.
Curriculum and Baking Courses
The 2026–27 catalog describes these baking and pastry courses:
- Kitchen Chemistry (3 credits, all five credentials)
- Baking I, II, and Barista Basics (4 credits): basic techniques, designer pastries, two-tiered cakes, and coffee pairing
- Pastry and Confectionary (4 credits): laminated doughs, candy, ice creams, and chocolate and sugar work
- Artisan Breads (3 credits): levain starters, poolish, whole grains, and sour ryes
- Cake Production and Cake Decoration (4 credits): multi-tiered cakes, gum paste, marzipan, and icings
- Advanced Pastry Skills (3 credits): the judged bakery case capstone
Sanitation and Safety requires passing a national sanitation exam, and the catalog says baking majors cannot register for kitchen labs without current ServSafe certification. Advanced Pastry Skills lists Artisan Breads as a prerequisite, even though Artisan Breads is not part of the Pastry Specialist certificate.
Tuition and Additional Costs
Sinclair’s Fall 2026 fee schedule charges $156.03 per credit for Montgomery County residents, $203.28 for other Ohio residents, and $359.40 for out-of-state students. Each rate includes the instructional, general and technology, and career services fees. A $85 auxiliary services fee applies each term. Estimates use the sample pathway lengths; Basic Baking and Fundamentals has no posted pathway, so it uses two semesters, the length Sinclair’s published program-length chart gives for 13–24 credits.
| Program | Credits | Estimated in-county tuition and fees | Estimated out-of-county Ohio tuition and fees | Estimated out-of-state tuition and fees |
|---|---|---|---|---|
| Bakery and Pastry Arts A.A.S. (5 semesters) | 65 | $10,567 | $13,638 | $23,786 |
| Bakery Operations and Pastry Skills Certificate (3 semesters) | 35 | $5,716 | $7,370 | $12,834 |
| Pastry Specialist STC (2 semesters) | 22 | $3,603 | $4,642 | $8,077 |

| Basic Baking and Fundamentals STC (2 semesters, assumed) | 13 | $2,198 | $2,813 | $4,842 |
These totals do not include books, uniforms, tools, the $7.50 per credit online course fee, transportation, or living costs. First-time registrants pay a $20 registration fee that Sinclair applies to first-term charges.
Sinclair also charges course, lab, and program fees that vary by course. The college does not list amounts for the baking labs in its catalog, so students should check each section in the registration portal or ask the department.
Admissions and Financial Aid
Sinclair’s enrollment steps begin with the online application. Students then work with an admissions counselor on math and English placement, meet an academic advisor to build a plan, and complete the How to Succeed in eLearn module, which is required before registering.
Students should file the FAFSA with school code 003119. The catalog notes that many certificates are not eligible for federal aid until the U.S. Department of Education approves them, and it directs students to an academic advisor to confirm eligibility.
Career Preparation and Transfer Considerations
The A.A.S. targets baker, pastry cook, pastry chef, pastry department assistant manager, and bake shop manager roles. The Bakery Specialist points to retail grocery bakery departments and independent bakeries. Sinclair’s certificate pages mention ACF certifications, such as Certified Pastry Culinarian, but note that additional coursework would be needed.
For the certificates, Sinclair says it has no formal articulation agreements, though it notes that it and Columbus State and Cincinnati State accept each other’s credits. The A.A.S. is a career degree. Students with bachelor’s plans should have a receiving school review credits early.
