Cambridge School of Culinary Arts Pastry Programs

Cambridge School of Culinary Arts is a private culinary school on Massachusetts Avenue in Cambridge, founded in 1974 and licensed by the Massachusetts Division of Occupational Licensure, Office of Private Occupational School Education. It offers two pastry tracks: a 16-week Certificate Pastry Program and a 37-week Professional Pastry Program.

Both are full-time, noncredit clock-hour programs built around two eight-hour lab days and one three-hour evening seminar each week, with a 12-to-1 student-to-instructor ratio in labs. CSCA is not a Title IV school, so federal grants and loans are not available. Figures below come from the school’s admissions page for the 2027 start dates.

Baking and Pastry Program Options

CSCA runs four professional programs, two culinary and two pastry. According to its resources and FAQ page, graduates earn a Pastry Certificate from the shorter track or a Pastry Chef’s Diploma from the longer one. The school also runs recreational cooking and baking classes, which are separate from these licensed programs and do not lead to a credential.

Professional Pastry Program

The Professional Pastry Program covers more than 740 hours over 37 weeks. It builds on the certificate material with sugar showpieces, chocolate molding, wedding cake design, and a savory cooking component. Grading adds midterm exams and a creative practicum to the certificate’s requirements.

For the January 2027 class, the published calendar runs from January 25, 2027, to January 14, 2028, with a summer break from late June to mid-September.

Certificate Pastry Program

The Certificate Pastry Program delivers more than 300 hours in 16 weeks and targets entry-level work as a pastry assistant or production baker. Graduates who complete it satisfactorily may transfer directly into the Professional Pastry Program. Upcoming cohorts start January 25, 2027, and May 10, 2027.

Curriculum and Baking Courses

Rather than numbered courses, CSCA organizes the pastry tracks into lab and seminar components:

  • Fundamentals of Pastry Arts: French technique, ingredient chemistry, commercial scaling, choux, Viennoiserie, fillings, meringues, sauces, and cakes
  • Food Safety seminar leading to the ServSafe exam
  • Food Management: purchasing, cost control, menu planning, and a food service concept project
  • Seminars on chocolate, fruits, herbs, and spices, recipe writing, and plating
  • Professional track only: a combined savory component, advanced techniques and presentations (chocolate tempering, pastillage, gum paste, pulled sugar, wedding cakes), and seminars on nutrition, food writing, wine, cheese, and catering

Graded work includes lab performance, quizzes, seminar exams and projects, events, a final practicum, a portfolio, and a final written exam. Event credits can be earned through teaching assistantships and off-site event support.

Tuition and Additional Costs

CSCA charges a flat price per program, and residency does not affect the rate. Its admissions page breaks down each total into tuition, equipment, class materials, textbooks, a ServSafe exam answer sheet, and a nonrefundable application fee:

ProgramLengthTuitionPublished total cost
Professional Pastry Program37 weeks; 740+ hours$29,995$32,015
Certificate Pastry Program16 weeks; 300+ hours$14,925$16,640

For the professional track, the other charges are $1,280 for equipment, $600 for class materials, $50 for textbooks, $45 for the ServSafe exam answer sheet, and the $45 application fee. The certificate track lists the same items except class materials, which drop to $295. Both totals add up exactly from these items.

Housing, transportation, and living costs are not included. Students may pay in full at the start or in two halves, and the professional track also allows quarterly payments.

Admissions and Financial Aid

Applicants must be at least 18 and have a high school diploma or equivalent. They submit an online application, the $45 fee, a personal statement, a resume, official transcripts, two letters of reference, and a passport-sized photo, then complete an interview, which is normally held on campus. The school reports decisions within two weeks on a rolling basis.

CSCA states that it does not offer loans, scholarships, or financial aid, and that students cannot use FAFSA-based aid such as Pell Grants. Some students take out private loans through banks or credit unions. The admissions page gives steps for applicants who may qualify for VA education benefits, and the school is approved to enroll international students on M-1 vocational visas.

Career Preparation and Transfer Considerations

CSCA lists assistant pastry chef, production baker, chocolatier, cake decorator, and caterer among the roles its professional pastry graduates pursue. Career services include a private job portal for students and alumni and appointments for resume and stage guidance.

These programs are noncredit and do not award college credit, so they are not designed to transfer into an associate or bachelor’s degree. Students who expect to continue in college may want to compare them with credit certificates at Massachusetts community colleges.
