SOWELA Technical Community College in Lake Charles teaches baking as a named concentration inside its Culinary Arts program rather than as a separate department. The 2026–27 catalog gives the Baking and Pastry Arts concentration three exit points: a Production Baker Certificate of Technical Studies, a 45-credit Technical Diploma, and the 60-credit Associate of Applied Science in Culinary Arts.
Two features set the sequence apart. One required course, Baking and Pastries of the South, is devoted to traditional southern breads and pastries, and the diploma and degree both end with a 9-credit baking internship at a college-approved employer. SOWELA states that the Culinary Arts program is accredited by the Accrediting Commission of the American Culinary Federation Education Foundation.

Baking and Pastry Program Options
All three options share one 18-credit culinary core and are described on the Baking and Pastry Arts page and in the college catalog. The catalog requires a C or better in every culinary course.
CTS Production Baker
The Production Baker certificate combines the 18-credit core with five 3-credit baking courses. Those courses add up to 33 credits, and the baking page prints 33, although the catalog table and the Culinary Arts page label the certificate “(37)”. The two sources also differ on whether Professional Baking and Pastries or the artisan bread course is the fifth certificate course, so an advisor should confirm the current list.
Technical Diploma, Baking and Pastry Arts
The 45-credit diploma covers the core, all six baking courses, and the 9-credit Baking and Pastries Internship. No general education courses are required at this level.
Culinary Arts AAS, Baking and Pastry Arts Concentration
The degree adds 15 credits of general education to the diploma coursework for 60 credits and 1,260–1,440 clock hours. The published plan puts the core in the first of four 15-credit semesters and the internship in the last. The degree awarded is the AAS in Culinary Arts.
Curriculum and Baking Courses
The core consists of Basic Skills Development, Essentials of Dining Room Service, Sanitation and Safety, Introduction to Culinary Principles (6 credits), and Nutrition. The concentration courses are:
- Introduction to Baking and Pastry: baking science, yeast doughs, quick breads, cakes, pies, puff pastry, custards, and plated desserts
- Baking and Pastries of the South: traditional southern pastries and breads
- Artisan Theory and Advanced Bread Techniques: artisan production, lamination, and enriched doughs
- Cake Decorating and Candy Making: decorating styles plus basic sugar and chocolate candy work
- Professional Baking and Pastries: tortes, mousses, chocolate decor, and desserts for buffets or plates
- International Pastry
- Baking and Pastries Internship (9 credits): supervised work in an approved industry setting, with a required portfolio
Cake Decorating and Professional Baking list the introductory, southern, and artisan bread courses as prerequisites or corequisites, and the internship requires five of the six baking courses first. The catalog says culinary courses are offered on-ground, online, or as a combination, and the college lists a fully online Culinary Arts AAS. It does not say whether every baking course can be taken online.
Tuition and Additional Costs
The latest tuition and fee schedule SOWELA has posted is for 2025–26, and the program’s Fall 2026 cost sheet repeats the same rates. Tuition is $138.96 per credit, which includes a $5.03 adjustment. Per-credit fees add $35 through 12 credits and $12 for each credit above that, because five of the seven fees stop rising at 12 credits. A $60 access fee and $5 SGA fee apply each semester. That comes to $2,605.40 for 15 credits. The schedule shows one rate and no separate non-resident charge, so both columns below match.
| Program | Credits | Estimated in-state tuition and fees | Estimated out-of-state tuition and fees |
|---|---|---|---|
| CTS Production Baker (2 semesters assumed: 18 and 15 credits) | 33 | $5,664 | $5,664 |
| Technical Diploma, Baking and Pastry Arts (3 semesters of 15 credits assumed) | 45 | $7,816 | $7,816 |
| Culinary Arts AAS, Baking and Pastry Arts Concentration (4 semesters of 15 credits) | 60 | $10,422 | $10,422 |
SOWELA does not publish a term count for the certificate or diploma, so those rows are assumptions. If prerequisites stretch the certificate to three 11-credit semesters, the estimate would be about $5,936. The figures leave out lab fees, books, uniforms, tools, and the $40 per-semester online registration fee.
The Baking and Pastry Arts cost sheet lists a $100 culinary lab fee for each on-ground lab course with no cap, a $180 uniform rental fee per semester, a $455.49 knife and tool kit, about $100 for shoes and socks, and $200 in supplies. The sheet totals $11,769.06 for the culinary courses, taken 12 credits at a time over four semesters, and it does not count general education.
Admissions and Financial Aid
New students follow SOWELA’s enrollment steps: choose a program, apply online, upload immunization and other required records, take a placement test or submit ACT or SAT scores, attend orientation, meet an advisor, and register. The college posts registration dates on its academic calendar.
SOWELA’s culinary pages do not say which of the shorter awards qualify for federal aid, so certificate students should confirm eligibility with the financial aid office before registering.
Career Preparation and Transfer Considerations
According to SOWELA, the concentration prepares graduates for entry-level jobs in restaurants, pastry shops, hotels, supermarkets, and independent bakeries. The first-semester cost sheet includes a kitchen cook certification exam and a ServSafe manager exam book.
The certificate stacks into the diploma and then the degree. The AAS is an applied degree, so students thinking about a bachelor’s program should review SOWELA’s transfer agreements and talk with the receiving school early.
