Jefferson State Community College offers three stackable Baking/Pastry pathways within Hospitality Management. Students can begin with a 16-credit short-term certificate, continue to a 31-credit certificate, or complete a 75-credit Associate in Applied Science.

Baking and Pastry Program Options
Jefferson State lists all three pathways in its Hospitality Management catalog. The credentials are structured so that certificate courses can count toward the associate degree under the applicable catalog requirements.
Baking/Pastry Associate in Applied Science
The Baking/Pastry AAS requires 75 credits. It includes 25 general education credits, 21 major-course credits, and 29 baking and pastry option credits.
Students complete foundations and advanced baking, specialty breads, cake decorating and design, chocolate and truffles, plated dessert design, food purchasing and cost control, and hospitality management. The plan also requires two pastry field-experience courses and a culinary apprenticeship practicum.
Baking/Pastry Certificate
The Baking/Pastry Certificate requires 31 credits. It includes English and math plus technical courses in basic food preparation, nutrition, food safety, baking, specialty breads, cake decorating, and chocolate work.
The college states that these courses are part of the AAS. A student can earn the certificate while completing the associate degree, but must submit a graduation application for the certificate.
Baking/Pastry Short-Term Certificate
The Baking/Pastry Short-Term Certificate requires 16 credits. Required courses cover hospitality orientation, basic food preparation and lab work, nutrition, sanitation and safety, and foundations of baking.
This is the shortest option and provides an entry point into the longer certificate and AAS pathways. Students must submit a graduation application to receive the short-term certificate.
Curriculum and Hands-On Training
The current 2026-27 catalog includes training in these areas:
- Foundations of baking and advanced baking
- Specialty breads
- Cake decorating and design
- Chocolate and truffles
- Plated dessert design
- Sanitation, food safety, and nutrition
- Food purchasing and cost control
- Hospitality management
- Culinary apprenticeship and pastry field experience
A grade of C is required in each major and Baking/Pastry option course in the AAS. Students should meet with an advisor before enrolling because course order and availability can affect the completion timeline.
Tuition and Additional Costs
For Fall 2026 through Summer 2027, Jefferson State lists tuition and required fees of $196 per credit for in-state students and $329 per credit for out-of-state students. Applying those rates to the published program credits produces these estimates:
| Program | Credits | Estimated in-state tuition and fees | Estimated out-of-state tuition and fees |
|---|---|---|---|
| Baking/Pastry AAS | 75 | $14,700 | $24,675 |
| Baking/Pastry Certificate | 31 | $6,076 | $10,199 |
| Baking/Pastry Short-Term Certificate | 16 | $3,136 | $5,264 |
These estimates multiply the published credit requirements by the college’s 2026-27 per-credit tuition-and-fee rates. They do not include housing, transportation, uniforms, tools, ingredients, lab costs, or other program expenses.
Students enrolled in Pioneer Pack pay another $27 per credit. That would add about $2,025 for the AAS, $837 for the certificate, or $432 for the short-term certificate. Review the current tuition and fees page and ask the program for a complete cost estimate before enrolling.
Admissions and Financial Aid
Applicants start with Jefferson State’s general college admission process. The college’s admissions section provides routes for first-time, transfer, returning, and other student types. An advisor can help students select the correct Baking/Pastry credential and course sequence.
Students seeking aid can submit the FAFSA using Jefferson State’s federal school code, 001022. Aid eligibility may vary by credential and enrollment level, so students should confirm whether the certificate or short-term certificate qualifies before registering.
Career Preparation and Transfer Considerations
These career programs prepare students for work in bakeries, pastry kitchens, restaurants, hotels, catering operations, and related hospitality settings. The AAS adds field experience, management study, and broader general education.
The AAS is an applied degree. Students who may later pursue a bachelor’s degree should ask the receiving college to review the Jefferson State curriculum before enrolling because transfer treatment can vary by institution.
