Elgin Community College Baking and Pastry Programs

Elgin Community College offers five baking and pastry credentials through its Culinary Arts and Hospitality department. They are a 69-credit Pastry Arts AAS, a 39-credit Bakery Supervisor vocational specialist certificate, and three basic vocational specialist certificates: Baker, Decorative Pastry, and Cook Assistant/Baker Assistant.

The Baker and Bakery Supervisor certificates stack into the AAS, while the 10-credit Decorative Pastry certificate stands apart as a short cake and showpiece credential. Students work in five kitchen labs, and Bakery Operations supplies Spartan Terrace Restaurant, college events, and the Spartan To-Go retail outlet. Details below come from the 2026–27 ECC catalog.

Baking and Pastry Program Options

All five credentials appear on the Culinary Arts and Hospitality catalog page. ECC’s Pastry Arts page describes Baker as the first certificate in the series, followed by Bakery Supervisor and then the degree.

Pastry Arts AAS

The Pastry Arts AAS totals 69 credits across five semesters, with the fifth reserved for a 240-hour Pastry Internship. Alongside the pastry courses, it includes Cooking Fundamentals I, purchasing, menu design, hospitality management, cost control, nutrition, and general education in composition, humanities, and social science.

Bakery Supervisor Vocational Specialist

The Bakery Supervisor certificate requires 39 credits over three semesters. It adds Patisserie and Confections I, Hospitality Management, ServSafe Manager Certification, and a business or English composition course to the Baker coursework.

Baker Basic Vocational Specialist

The 23-credit Baker certificate covers Baking Fundamentals I and II, Yeast Bread, Cooking Fundamentals I, and Intro to the Hospitality Industry over two semesters.

Decorative Pastry and Cook Assistant/Baker Assistant

Decorative Pastry is two courses, Cake Decorating and Decorative Pastry, for 10 credits. ECC says it is separate from the degree path and focuses on buttercream, fondant, gum paste flowers, marzipan, and chocolate or sugar centerpieces. The 11-credit Cook Assistant/Baker Assistant certificate pairs Cooking Fundamentals I and Baking Fundamentals I with Intro to the Hospitality Industry, matching the first semester of the longer programs.

Curriculum and Baking Courses

The catalog lists these pastry courses:

  • Baking Fundamentals I (4 credits) and Baking Fundamentals II (6 credits)
  • Yeast Bread (6 credits), including viennoiserie, artisan breads, and dough sculpture
  • Patisserie and Confections I and II (6 credits each)
  • Cake Decorating (4 credits) and Decorative Pastry (6 credits)
  • Bakery Operations (3 credits)
  • Pastry Internship (3 credits, 240 hours)

Yeast Bread is offered in spring only, and Cake Decorating and Decorative Pastry are offered in varying terms, according to the pastry course descriptions. Most advanced pastry courses require a C or better in an earlier PAS course, so planning the sequence early can help students avoid a delay.

Tuition and Additional Costs

ECC’s tuition and fees page lists rates effective Summer 2026 of $148 per credit in-district, $297 out-of-district, and $396 out-of-state. The only mandatory fee listed for all students is a $6 enrollment fee each semester. Estimates below use the catalog plans, and they assume one semester for the two short certificates that have none:

ProgramCreditsEstimated in-district tuition and feesEstimated out-of-district tuition and feesEstimated out-of-state tuition and fees
Pastry Arts AAS (5 semesters)69$10,242$20,523$27,354
Bakery Supervisor VS (3 semesters)39$5,790$11,601$15,462
Baker BVS (2 semesters)23$3,416$6,843$9,120
Cook Assistant/Baker Assistant BVS (1 semester assumed)11$1,634$3,273$4,362
Decorative Pastry BVS (1 semester assumed)10$1,486$2,976$3,966

These figures include tuition and the enrollment fee only. Course lab fees, the required uniform and tool kit, books, transportation, and living costs are extra.

Lab fees add up. The 2026–27 catalog lists in-district course totals that include a $200 fee for Baking Fundamentals I and II, Yeast Bread, both Patisserie and Confections courses, Decorative Pastry, and Cooking Fundamentals I, plus $100 each for Cake Decorating and Bakery Operations. That comes to about $1,300 in fees for the AAS, $1,000 for Bakery Supervisor, $800 for Baker, $400 for Cook Assistant/Baker Assistant, and $300 for Decorative Pastry. The uniform and tool kit must be ordered from the ECC Bookstore, which the catalog says takes two weeks.

Admissions and Financial Aid

ECC has open admission and no application fee. Its new student steps call for applying, filing for financial aid and scholarships, and submitting transcripts or test scores to meet placement criteria. ECC’s placement tests are free, and students who meet placement then complete online orientation and meet with an advisor.

ECC offers federal and state grants, scholarships, work-study, and loans, with priority dates of July 1 for fall and November 1 for spring. The college does not publish aid eligibility for each pastry certificate, which matters most for the 10- and 11-credit options.

Career Preparation and Transfer Considerations

Outcomes listed for the pastry program include ServSafe Food Manager and ServSafe Responsible Alcohol Service certification, bakers’ percentages and yield conversions, and production of saleable bakery items. ECC names roles such as baker, cake decorator, chocolatier, pastry sous chef, and executive pastry chef. The college does not state ACF accreditation.

ECC reports transfer agreements with several four-year schools. It also says that all CUL, HOS, and PAS courses numbered 100 or above can count toward the major field and elective requirement in its Associate in Arts and Associate in Science degrees.
